Fillet beef 300 gr Rice vermicelli 500 gr Pork fat 100 gr Onion 100 gr Green bananas 30 gr Sour starfruit 20 gr Lettuce 50 gr Pineapple 1/8 fruit Cucumber 1 fruit Carrot 50 gr Daikon 50 gr Lemongrass 10 stalks Minced garlic 1 teaspoon Minced chili 1 teaspoon Crushed peanuts 50 gr Fish sauce 2 tablespoons Vinegar 40 ml

How to prepare Bo dun (grilled beef on skewers)

  • Prepare the ingredients

    First, rinse the beef, then slice it into pieces about 3×5 cm. For the pork fat, wash it thoroughly and cut it into long strips about 2cm.

    The remaining ingredients are prepared as follows:

    • Lemongrass: remove the old leaves, chop finely. Then soak it in 20ml of vinegar and 2 tablespoons of sugar.
    • Onion: slice thinly and long.
    • Pineapple: wash clean, remove the core and chop finely.
    • Carrot and white radish: peel, wash clean, and shred. Then soak together in water with an additional 20ml of vinegar and 2 tablespoons of sugar.
    • Unripe banana, sour starfruit, cucumber: wash clean, slice thinly to taste.
    • Lettuce: wash clean and drain.
    Tip: When slicing the beef, cut across the grain so that it doesn’t become tough when eaten. Position the meat piece so that the grain runs perpendicular to the handle of a knife.

  • Beef preparation

    Put the beef into a bowl, then gradually add pepper, monosodium glutamate, sesame oil, honey, crushed peanuts, lemongrass, and 1 teaspoon of minced garlic. You wear gloves to mix well and then place it in the fridge refrigerator to let the meat absorb the spices.

    About 30 minutes later, spread the piece of beef, place a piece of fat and a piece of onion in the middle. Carefully roll it so that the beef wraps around the piece of fat.

    Skewer the beef to shape it, doing this until all the beef and fat are used up.

    Finally, arrange the beef skewers on a grill and roast them on an electric stove or charcoal stove.

    Tip: During the grilling time, be sure to turn evenly to ensure the meat is cooked and not burnt.

  • Make dipping sauce

    You can refer to one of the two following dipping sauces

    • Aromatic fish sauce: 1 teaspoon of aromatic fish + 2 tablespoons of fish sauce + 2 tablespoons of sugar + 1/2 teaspoon of minced garlic + 1/6 teaspoon of monosodium glutamate + 1 teaspoon of minced chili
    • Mixed fish sauce: 1 teaspoon of minced aromatic fish + 2 tablespoons of mixed fish sauce + 2 tablespoons of sugar + 1 tablespoon of minced garlic + 1/6 teaspoon of monosodium glutamate + 2 teaspoons of minced chili.

    Serve the grilled beef sprinkled with roasted peanuts, accompanied by sour green bananas, starfruit, cucumber, pickled radish, and sweet and sour carrots, with rice vermicelli. This dish is dipped in a fragrant fish sauce mixture.

  • Chop pork fat

    Cut 50g of pork fat into small pieces and mix well with 1 tablespoon of sugar, marinate for 30 minutes.

  • Marinate the meat mixture

    After marinating the fat, mix it with 100g of minced pork, 200g of minced beef, and season with 2 tablespoons of fish sauce, 2 tablespoons of sugar, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of pepper, 1 tablespoon of oyster sauce, 1 tablespoon of minced garlic, and 1 tablespoon of minced shallots.

    Then, wear gloves and mix all the ingredients thoroughly, then wrap it in plastic wrap. Place in the freezer for 1 hour for the meat to absorb the spices and to help it firm up.
