  • You should choose bunches of water spinach with tender tops, straight and long stems. The stems should be thick, and when you break them with your hands, a thin sap should flow out from inside. That means the water spinach is still fresh and very tasty.
  • Do not choose plants with dark green leaves, shiny surfaces, and thicker stems than usual. That indicates the water spinach has been over-fertilized, which can turn dark green when cooked and looks unappealing.

  • Prepare Water Spinach

    After buying, pick the young leaves of the water spinach, soak them in diluted salt water for about 15 minutes, then take them out and rinse thoroughly, let them drain, and then chop them into small pieces.
