Mackerel 1 kg (about 3 fish) Pork belly 400 gr Canned crushed tomatoes 2 cans Coconut water 180 ml Red onions 4 bulbs Garlic 1 bulb Chili 10 pieces Cooking oil 5 tablespoons Common spices a little (Sugar/ salt/ seasoning powder/ ground pepper)

  • Choose those with clear, slightly bulging eyes that are not leaking yellow fluid.

  • Currently, you should look for canned crushed tomatoes at supermarkets and large food stores to ensure quality and food safety. Additionally, you can also find them on major and reputable e-commerce sites for cooking.

  • Prepare and marinate mackerel

    When you buy the fish, cut off the fins, gills, and clean the insides. After that, you can add a little salt to wash the fish with water to help reduce the fishy smell, then place it in a basket to drain.

    Next, place the cleaned mackerel into a large bowl and proceed to marinate it with the following seasonings: 2 tablespoons of seasoning powder, 1 tablespoon of sugar, 1 teaspoon of pepper, and 1 teaspoon of salt, then mix well to let the fish absorb the seasonings evenly.

  • Prepare the meat and other ingredients

    For the pork you bought, use a little salt to rub on all sides of the meat, then wash it thoroughly several times and cut it into small slices for eating.

    Peel the garlic and shallots, wash them clean, let them dry, and slice them thinly.

    As for the chili, you just need to leave it whole, wash it briefly with water, and place it in a basket.

  • Sauté the meat with tomatoes

    Use the pot of the electric pressure cooker and place it on the stove, add 5 tablespoons of cooking oil and put all the sliced garlic and shallots in to sauté until fragrant.

    Then continue to add the prepared pork belly and sauté for about 5 minutes until the meat is firm and just cooked, then add 1 teaspoon of seasoning salt, 1 tablespoon of sugar, and 1/2 teaspoon of pepper.

    Next, sauté the meat for another 3 minutes for the spices to blend evenly, then continue to add 2 cans of crushed tomatoes and use a spatula to mix well, then turn off the heat!

  • Braised fish

    Add the stir-fried pork belly mixture with about 8 – 10 chili peppers into the pot, then evenly arrange the mackerel pieces.

    Next, pour in about 180ml of coconut water, then place the pot back into the electric pressure cooker to prepare for braising the fish.

    Securely close the pressure cooker lid, lock the valve, then select the “Stew” or “Cook” function, set the high pressure level, and set the cooking time for about 50 minutes – 1 hour. After cooking, release the pressure valve before opening the pot lid!

    Tip: Depending on the tenderness of the braised fish, you can adjust the cooking time accordingly!

    After completing the above steps, you will have a pot of extremely delicious and attractive mackerel braised in tomato.   • Prepare the fish

    After purchasing the carp, remove all the internal organs, cut off the gills, fins, and tail, scale the fish, and wash it thoroughly with diluted salt water. Then, rinse the fish several times with clean water and place it in a basket to drain.

    Next, use a knife to cut the fish into pieces about the length of two fingers and place them on a plate to prepare for braising with pickled mustard greens!

    For the pork belly, rub a little salt on all sides, then rinse it several times with water, drain, and slice it thinly.

    Cut the pickled mustard greens into bite-sized pieces, about 2 – 3 fingers in length.

    Peel the galangal, wash it clean, drain it, and chop it finely.

    Peel off the wilted outer leaves of the lemongrass, then cut off the top and wash it well with water and drain. Next, slice it thinly to stir-fry with the meat.

    Next, cover the electric pressure cooker, close the valve, and select the stewing mode, then let the pot cook the fish automatically.

    After stewing, open the pot and replace it with a regular glass lid, continue to select the stir-fry mode or normal cooking mode to reduce the liquid and make the fish drier and tastier!
