Choose fresh shrimp with transparent legs that stick tightly to the body. The shrimp’s body should be slightly curved, with firm, taut flesh, and not too large. The shell of the shrimp should be intact, with the head firmly attached to the body. The tail of the shrimp should be neatly arranged, not spread out or missing.

How to prepare Seaweed Soup with Fresh Shrimp

  • Prepare the shrimp

    Cut off the head and legs of the shrimp, then peel the shell. Use one hand to hold the shrimp’s head and the other hand to hold the shrimp’s body, gently separating the dirt from the outside. Once all the dirt is removed, gently pull the shrimp vein out, then rinse the shrimp thoroughly with clean water.

    To enhance the shrimp’s flavor when cooking, marinate the shrimp with 2 teaspoons of seasoning powder and add 1 teaspoon of minced shallots for about 10 minutes.

    Cut the seaweed package open, put it in a pot, pour enough water to cover the seaweed, soak for about 15 minutes, then take it out, add salt and gently massage for about 1-2 minutes before rinsing again with clean water.

    Place a pot on the stove and add 1 teaspoon of cooking oil. When the oil is hot, add the chopped shallots to the pot and stir until fragrant.

    Add the shrimp to the pot and gently stir until the shrimp are firm and slightly red.

    Next, pour 400ml of water into the pot, add the sliced ginger, and bring the mixture to a boil. Add the seaweed and stir well for the seaweed to cook.

    Add 1 tablespoon of fish sauce to the pot, cover it, and let the soup boil once more. Then season with a little monosodium glutamate and add the green onions before turning off the heat.

  • The outside of the shrimp has a natural orange color, while the inside is yellowish, not too bright, and free from black or white mold.
  • When held, it feels dry, not too moist, as storing shrimp in a damp environment can lead to mold.

How to choose good tofu

  • The outside of the tofu piece is off-white, intact, and not broken.
  • When held, it feels light, is soft to the touch, and has a fragrant smell of soybeans.

How to choose good shiitake mushrooms

You can use either fresh or dried shiitake mushrooms.

  • Choose dried shiitake mushrooms that feel slightly heavy when held, are of moderate size, have tightly curled caps, and a natural brownish-yellow color that is not overly dark.
  • Fresh shiitake mushrooms may have slightly cracked caps but are relatively uniform and plump. The folds under the cap are closed. The mushrooms have a natural fragrant smell.

How to prepare Seaweed soup with dried shrimp

  • Soak dried shrimp

    Before soaking, the dried shrimp need to be washed thoroughly with cold water. Then soak the shrimp in warm water for 15 – 30 minutes to soften them.

    Alternatively, you can use a pestle to lightly crush the shrimp and then add them to the soup while cooking to help the dried shrimp soften more quickly!

    Wash the tofu briefly with water until clean, then cut it into small square pieces.

    Peel the shallots, and slice them thinly. Soak the dried shiitake mushrooms in warm water for about 10 minutes to expand, then rinse clean and cut into bite-sized pieces.

    Peel the ginger, and mince it finely.

    • Soak the shiitake mushrooms in water with a temperature of 60 – 80 degrees Celsius for about 7 – 10 minutes to expand. Or soak in cold water for at least 8 hours or overnight.
    • Then cut off the stems of the mushrooms. Rinse the mushrooms, rinse several times, and gently squeeze after each rinse to clean the sand and dirt.

    Add 2 teaspoons of cooking oil to the pot. When the oil is hot, add the shallots and stir until fragrant.

    Add dried shrimp and shiitake mushrooms in turn and stir evenly. Season with 1 teaspoon of seasoning powder and stir quickly for 3 minutes.

    When the mixture becomes fragrant, add 400ml of water to the pot and add the minced ginger to eliminate the fishy smell of the seaweed.

    When the water boils, taste and adjust the seasoning, then add the tofu.

    Once the water boils again, add 1 teaspoon of soy sauce. Then add the seaweed until it is tender to complete the dish.

Soak the dried seaweed in cold water with a little chopped ginger for 15 – 20 minutes until it expands and softens, then remove, rinse clean and prepare.

Method 3: Remove the fishy smell with vinegar

Soak the seaweed in cold water for 15 – 20 minutes until it expands and softens, add a little vinegar, gently massage for 1 – 2 minutes, then rinse clean with water.

Method 4: Marinate with sesame oil

Soak the seaweed in cold water for 15 – 20 minutes until it expands and softens, rinse clean, drain, then cut the seaweed into suitable sizes and marinate with salt, seasoning powder, and sesame oil before cooking.
