How to Make Fried Shrimp Paste

  • Prepare the shrimp

    Clean the shrimp thoroughly, remove the meat, and then wash it. Clean the shrimp meat and peeled shrimp, then chop finely.

    Finely chop lemongrass, shallots, and wood ear mushrooms.

  • Mixing the filling

    Add the bề bề, minced pork, and shrimp to a bowl along with chopped lemongrass, onion, and shiitake mushrooms. Add 1/3 teaspoon of pepper and 1/2 teaspoon of seasoning powder, and mix the filling well by hand.

  • Steaming the filling

    Use a spoon to take an adequate amount of filling, shape it by hand, and place it on top of the whole bề bề to create a beautiful shape for the bề bề cake.

    Flip the spoon and place it on a plate. Continue until finished.

    Steam for about 10 – 15 minutes, then take it out and wait for it to cool.

  • Frying the cake

    Put the cooled filling into a frying pan filled with oil over medium-low heat until golden brown.

    Note:

    It is advisable to wait for the filling to cool after steaming; otherwise, when frying, it may break apart and not taste good.

    Wait until the oil is really hot before adding the filling to fry; you can use chopsticks to touch the bottom of the pan and see bubbles rising up to know it’s ready.

Rice paper 100 gr Shrimp 300 gr Ground pork 150 gr Chicken eggs 2 eggs (yolks) Calamondin 1 fruit Chopped carrots 100 gr Chopped green onions 50 gr Chopped jicama 100 gr Chopped shallots 50 gr Chopped shiitake mushrooms 100 gr Chopped garlic 50 gr Chopped chili 50 gr Seasoning 10 gr (fish sauce/sugar/chili sauce…)

How to Make Shrimp Spring Rolls

  • Prepare the Shrimp

    Clean the shrimp, remove the shell, and finely chop the meat.

  • Mixing the filling

    Add minced shrimp, ground pork, shiitake mushrooms, carrots, jicama, green onions, 1/2 teaspoon of pepper, and 1/2 teaspoon of monosodium glutamate, and mix well for the mixture to absorb the flavors.

    Place an appropriate amount of filling on the rice paper, and roll from the inside out as it helps make the spring rolls tighter than rolling in the opposite direction.

    Tip: To make the spring rolls crispy, mix a combination of: 1 tablespoon of water, 1 tablespoon of vinegar, 1 teaspoon of sugar, and evenly spread the mixture over the rice paper to create crispiness and a beautiful golden color.

    Place the rolled spring rolls into a deep pan with oil and fry on low heat until they are golden brown.

    Tip: Before frying, you can brush a layer of cooking oil on the outside of the rice paper to help the spring rolls become crispier and achieve a more golden color.

    In a bowl, add 3 tablespoons of sugar, 3 tablespoons of vinegar, 3 tablespoons of water, 3 tablespoons of fish sauce, 1 teaspoon of lime juice, and 2 tablespoons of chili sauce, and mix well until the mixture is dissolved.

    Add minced garlic and chili, then mix well to finish the wonderful dipping sauce!

How to choose and prepare mantis shrimp

Mantis shrimp is also known as mantis shrimp, shrimp, boat shrimp, or hammer shrimp.

How to choose good mantis shrimp

You can choose to buy peeled mantis shrimp or buy fresh mantis shrimp to peel yourself.

The best way to choose fresh mantis shrimp is to select those that are still alive, moving actively and quickly, and feel firm when held.

Hold the mantis shrimp in your hand and turn its belly up; if you see a pinkish-red streak at the tail, you should choose it right away.

How to quickly and simply prepare and peel live mantis shrimp without breaking them

Method 1: Use scissors to cut along the body, removing the sides of the mantis shrimp, then separate the shell from the tail up, and finally remove the soft shell from the belly.

For fresh mantis shrimp, clean them and separate the meat. First, you should turn the belly of the mantis shrimp up, hold the body at an angle, and use scissors to cut off the two sides along its body.

You should turn the mantis shrimp over to cut because if they are upside down, their body is very soft and much harder to cut. One hand holds the body while the other starts to peel the hard shell from the tail up.

Finally, just peel off the soft shell underneath the belly. You can see the mantis shrimp meat exposed after peeling it from the belly shell.

Method 2: Use chopsticks to pierce from the tail along the back of the mantis shrimp, ensuring the chopsticks are close to the hard shell, and use your hand to peel the shell from the tail up to the head.

Tips for successful execution

  • When frying, keep the heat low until you see the filling cooked through, then increase the heat, turning regularly to ensure even cooking before removing it, which helps the rolls and meatballs to be crispy on the outside and absorb less oil compared to frying on low heat.
  • You should not season the mantis shrimp meat with fish sauce because fish sauce makes the mantis shrimp meat mushy and less delicious.
