How to cook frog with turmeric

  • Prepare the ingredients

    After buying the frog, remove all the organs and wash it clean with vinegar or alcohol, adding a bit of crushed ginger, then rinse with cold water.

    Then, let the frog drain in a basket, and proceed to cut it into bite-sized pieces.

    Peel the garlic, crush it, and then finely chop it. Wash the green onions and cut them into small pieces. Wash the perilla leaves and cut them into small pieces as well.

  • Marinate the frog

    When the frog is drained, marinate it with 1 teaspoon of seasoning, 1/2 teaspoon of pepper, 1 tablespoon of turmeric powder, 2 teaspoons of fish sauce, and half of the minced garlic.

    Use chopsticks to mix well and let it sit for about 7 – 10 minutes for the frog to absorb the spices.

    Place a pot on the stove and add 1 tablespoon of cooking oil, then add the remaining garlic and sauté until fragrant.

    Once the garlic is fragrant, add the frog and stir-fry evenly, when the frog meat firms up, add about 200ml of water.

    When the water boils, taste and adjust the seasoning to your liking, then simmer for another 7 – 10 minutes, add the green onions and perilla leaves, then turn off the heat to finish.

How to Prepare Stir-Fried Frog with Lemongrass and Chili

  • Prepare the Ingredients

    You can buy frogs that have already been cleaned at supermarkets or reputable grocery stores for safety and to save preparation time.

    Wash the frogs with salt water or vinegar, or alcohol with a few slices of smashed ginger to reduce the fishy smell of the frogs.

    Rinse with clean water and then use a knife or scissors to cut the frogs into bite-sized pieces.

    Wash the lemongrass, take half of it to chop finely, and cut the remaining half into small slices to marinate with the frogs.

    Peel the garlic and shallots and then chop them finely.

    Use chopsticks to mix well and add the sliced lemongrass and 2 bird’s eye chilies.

    Continue to mix well and let it sit for about 10 – 15 minutes for the frogs to absorb the spices.

    Once the ingredients are fragrant, add the frogs and stir-fry evenly. When the frog meat firms up, add about 200 – 250ml of water.

    When the water boils, season it to taste and simmer for an additional 10 – 15 minutes until the sauce thickens, and it’s done.

  • It is best to buy live frogs and ask the seller to prepare them on the spot. Avoid buying frozen frogs, as frozen frogs will not taste good and lose some nutritional value.
  • Delicious frogs are those that are large, have brownish-yellow skin, a slender head, and bright eyes.
  • Additionally, frogs with thick thighs and a white or yellow belly are also healthy and tasty frogs.

How to prepare whole frogs:

  • First, you need to remove parts such as the head, hands, and feet of the frog.
  • Depending on your preference, you can either remove or keep the frog’s skin. If you keep the skin, you should blanch the frog in boiling water and then use a knife to scrape it clean to remove any parasites.
  • The frog’s spine contains anesthetic substances that are not good for health, so you should also remove the spine of the frog.
  • Remove the internal organs and blood vessels in the muscles of the frog, as these are the organs that harbor many harmful parasites.
  • After removing the above parts, wash the frog meat with water mixed with vinegar or alcohol along with crushed ginger. While washing, use your hands to rub it to make the frog meat cleaner. Then rinse it again with cold water.
