Anchovies 300 gr Spring onion 1 stalk Chili powder A little (or fresh chili) Fish sauce 1 teaspoon Cooking oil 1 tablespoon Common seasoning A little (Salt/ sugar/ seasoning powder/ monosodium glutamate/ ground pepper)

How to Cook Anchovy with Pepper

  • Prepare Ingredients

    First, wash the anchovies several times with water until clean and then let them drain.

    Next, trim the roots and withered leaves of the green onions, then wash and chop them finely.

  • Marinate the Fish

    Add the prepared anchovies into a clay pot along with 1/2 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1 tablespoon of sugar, 1/2 teaspoon of chili powder, 1 teaspoon of ground pepper, 1 tablespoon of cooking oil, and 1 teaspoon of fish sauce.

    Tip: If cooking the fish with fresh chili, you can add whole crushed chili or cut the chili into pieces.

How to Cook Anchovy with Turmeric

  • Prepare Ingredients

    Wash the anchovies thoroughly and place them in a basket to drain. Then, put the fish into a bowl and season with a little salt to make the fish firmer.

    Finally, marinate the fish with turmeric powder, sugar, and seasoning, then let it sit for a while to absorb the flavors.

    Heat a clay pot on the stove and add a little cooking oil. Cook until the oil is hot, then add minced garlic and shallots and sauté until fragrant, then transfer to a small seasoning bowl. Next, add 2 tablespoons of sugar and stir until the mixture turns a caramel color.

    Continue to add a little clean water and 3 tablespoons of fish sauce, bringing it to a gentle boil before adding the anchovies. Use chopsticks to gently stir to avoid breaking the fish. Adjust the seasoning to taste, then cook until the sauce thickens slightly before turning off the heat.

How to Choose Fresh and Delicious Anchovies

Tips for Successful Execution

  • Gently use chopsticks to stir the fish while cooking. Do not stir vigorously, or the fish will break apart.
  • When the cooking liquid for the fish starts to run low, you should add more water. Doing this about 2 – 3 times will allow the fish to absorb the flavor and become firm.
