Mackerel roe 250 gr Shallots 2 bulbs Chili 1 piece Pineapple 1/2 piece Ginger 1 piece (small) Fermented rice vinegar 1 tablespoon Chili powder 1/4 teaspoon White sugar 3 tablespoons Pepper 1/2 teaspoon Fish sauce 5 tablespoons Cooking oil 50 ml

How to prepare grilled mackerel roe with pineapple

  • Prepare the ingredients

    Wash the roe thoroughly, blanch the roe in a pot of boiling water with ginger and vinegar until it bubbles a bit, then remove it. Immediately place the roe in a bowl of cold ice water to help it maintain a beautiful color without turning dark.

    Peel the pineapple, cut it into bite-sized pieces, or if you don’t like eating pineapple, you can also use a blender to extract the juice.

  • Sauté the roe

    Crush a garlic clove and add it to the heated oil in the pan to remove the fishy smell of the roe. When the oil is hot, add the roe to the pan and sauté briefly.

    Wait about 7 minutes, until the roe is cooked and firm, being careful not to leave it too long as it will become dry and hard. Turn off the heat, remove the roe, and cut it into thick slices of 1.5 – 2cm.

    Tip: If you are afraid of oil splattering, add a little salt to prevent the oil from splashing.

    Drain the oil in the pan, leaving about more than 15ml of oil for stewing. Add minced shallots, 3 tablespoons of sugar, and 4 – 5 tablespoons of fish sauce. Turn on the stove, stir the mixture in the pan to make caramel over medium heat.

    The sugar turns a reddish-brown color, add the fish roe, lower the heat, add 1/2 teaspoon of pepper, a little chili powder or finely chopped chili along with 1/2 cup of water.

    After 5 – 7 minutes, pour in the pineapple (or pineapple juice), continue cooking over medium heat. If you prefer a broth, add an additional 1/3 cup of water. Turn off the stove after 5 minutes. Taste and adjust seasoning to your liking.

  • Prepare the mackerel roe

    You blanch the mackerel roe in a pot of boiling water with ginger and vinegar until it bubbles up a bit, then remove it. Continue to place the mackerel roe in a bowl of cold ice water.

  • Make the braising sauce

    Add 1 tablespoon of sugar, 1/2 tablespoon of annatto oil, 2 tablespoons of fish sauce, a little MSG, and 1 teaspoon of turmeric powder into a bowl and stir well until the mixture is evenly dissolved. Depending on your taste for sweetness, you can reduce the amount of sugar.

    Put onions with a little oil in a clay pot to sauté until fragrant. Add a bit of water to the braising sauce mixture, then pour it into the clay pot and bring to a boil.

    Wait until it thickens a bit, then add the fish roe, turn the heat down to low, and cover the pot. When you see the surface of the fish roe firm up, it’s ready. At this point, season to your family’s taste. Top with a little chili and pepper to enhance the aesthetics and flavor.
