How to prepare Sardines braised with tomatoes

  • Prepare the ingredients

    Buy sardines, clean out the guts and wash them thoroughly, then place them in a basket to drain.

    Wash the tomatoes and let them drain. Peel the garlic and mince it finely.

    Tip: Frying the fish beforehand helps the fish become crispier when braised, prevents it from breaking, and also eliminates the fishy smell.

  • Make tomato sauce

    You wash the tomatoes and cut them into small cubes or you can chop them finely.

    You add a little cooking oil to the pan, and when the oil is hot, add minced garlic to sauté until fragrant.

    When the garlic is fragrant, you add the finely chopped tomatoes. Boil for about 5 minutes, then season with seasoning powder, sugar, and salt. Continue to cook until the mixture thickens slightly.

  • Stew the fish

    You heat a non-stick pan with a little cooking oil, adding a bit of salt to prevent splattering. When the oil is hot, add the fish to fry until golden.

    When the mixture has thickened slightly, add the fried fish to the pot, using chopsticks to gently stir so that the tomato sauce coats the fish evenly.

    You add a small bowl of boiling water, then continue to stew for about 5 more minutes until the fish is cooked.

  • Prepare Ingredients

    After buying the mackerel, you need to remove all the insides and wash it clean, then place it in a basket to drain.

    Wash the sour pickled mustard greens with diluted salt water, then squeeze them dry and cut them into small pieces.

    Crush the shallots and garlic, then chop them finely.

  • Cook the Fish

    First, you need to lightly fry it in a hot pan with oil. Fry until the fish is golden brown on both sides, then turn off the heat and place the fish on a plate lined with absorbent paper (or paper towel).

    Add a little cooking oil to the pan and wait for it to heat up, then add the chopped shallots and garlic to sauté until fragrant.

    When the shallots and garlic are golden and fragrant, add the shredded sour pickled mustard greens and continue to stir everything together.

    Sauté everything for about 3 minutes, then add the fish, using chopsticks to gently stir so the fish doesn’t break apart.

    During this time, start seasoning with salt, sugar, and seasoning powder to taste. Cook for another 5 minutes until the fish is done.
