Prepare and Marinate the Barramundi
Buy barramundi, use a knife to remove the guts, cut the gills, and gently rub salt or lime on the fish’s body.
Continue to wash the fish with vinegar, then rinse 1 – 2 times with clean water, and then place it in a basket to drain.
When the fish is drained, marinate it with 1/3 tablespoon of salt, 1/3 tablespoon of seasoning powder, 1/4 tablespoon of monosodium glutamate, 1/2 tablespoon of sugar, 1 tablespoon of fish sauce, and 1/3 tablespoon of turmeric powder.
Use chopsticks to stir well, then marinate the fish for 30 minutes to allow it to absorb the spices.
Note: If you do not use turmeric powder, you can also use fresh turmeric that has been crushed. Then use it directly for marinating or filter the turmeric juice and then braise the fish. Filtering the turmeric juice for braising will help the braising liquid become clear and the fish absorb the spices more attractively.
