How to make Vegetarian Fried Rice with Lemongrass

  • Prepare the ingredients

    After cooking the rice, fluff it, let it cool, and put it in the refrigerator for 2 – 3 hours to make the rice really dry.

    Mushrooms should be soaked in salted water for 15 minutes, then washed thoroughly. Use a knife to cut the mushrooms into small cubes.

    Tofu should be cut into thin 1 cm slices, then diced into small cubes.

    Wash the chili and lemongrass, then finely chop them.

    Tip: Putting the rice in the refrigerator will help the rice dry out and not stick together when frying, making it tastier.

    Place a pan on the stove and add oil to cover half of the pan. Heat the oil until it’s very hot before frying the tofu.

    When the oil is hot enough, add all the tofu to fry. Fry until the tofu is evenly golden, then remove it.

    When the mushrooms are cooked, add the tofu and stir-fry together, mixing well until both the mushrooms and the tofu are evenly cooked, then turn off the heat.

  • Prepare the ingredients

    After cooking, fluff the white rice and transfer it to a bowl to cool. Place it in the refrigerator for 2 – 3 hours so the rice becomes fluffy and does not stick together.

    Wash the chili peppers and chop them finely.
