How to make Grilled Mackerel with Garlic and Chili

  • Prepare the marinade

    Peel the garlic, wash it clean, then chop finely. Wash the chili, chop finely.

    In a bowl, combine 10gr of chopped garlic, 10gr of chopped chili, 1 teaspoon of cooking oil, 2 tablespoons of fish sauce, and mix well.

  • Prepare the fish

    After purchasing, remove the intestines, liver, scrape off the scales, and then rub it with salt to clean off the slime.

    Then, rinse the fish with clean water and let it drain, then use a knife to make a few cuts along the fish’s body.

    Tip: Making a few cuts on the fish helps the fish absorb the seasoning quickly and shortens the cooking time.

How to choose delicious mackerel

  • Fish eyes: Choose fish with bulging, clear eyes; when gently pressed with your finger, they should have good elasticity. However, if the eyes are sunken, have wrinkled corneas, or are cloudy, do not choose them.
  • Fish gills: Fresh fish gills will be bright red and not slimy.
  • Fish scales: Good fish will have shiny scales that cling tightly to the body extending to the tail, and will not have a foul smell. Conversely, if you see that the scales are not shiny and are peeling off, absolutely do not buy.
  • Anus: The anus of mackerel is located on the belly close to the end of the tail. If the fish’s belly is flat, the anus is swollen, and the outside appears uniformly white with no signs of color changes like red or pink, then it is fresh fish.
  • Fish mouth: The mouth of fresh fish is always tightly closed, so if you see the mouth slightly open, it indicates that the fish is spoiled and rotten.

How to clean mackerel without a fishy smell

  • First, clean the fish’s intestines, gills, fins, and tail, then rinse with water.
  • Then, use salt or ginger water to rub all over the fish to remove the fishy smell and slime. You can also use lemon juice or vinegar, which will have a similar effect.
