For the orange, squeeze to obtain about 150 ml of juice, then use a sieve and cloth to filter it.
For the watermelon, cut off the skin, remove the seeds, and either juice or blend it to get the liquid. Then, you need to use a sieve and clean cloth to filter it again to obtain pure juice.
Similarly, for the dragon fruit, cut out the flesh and juice or blend it to obtain the liquid.
Next, take 7 grams of green tea powder, mix it with 200 ml of boiling water, and stir well until the powder is completely dissolved. Then, wait for 2 minutes to let the sediment settle and filter out the liquid from the top.
Similarly, mix 16 grams of instant coffee with 150 ml of boiling water in a separate bowl, and mix 10 grams of cocoa powder with 150 ml of boiling water in another bowl.
Finally, place the butterfly pea flowers in a small bowl, add 170 ml of boiling water, and wait about 15 minutes until the flowers release the desired blue color, then use a sieve and cloth to filter out the pure liquid.
Note: If you find the dragon fruit juice too thick, you can add 100ml of cold water to make filtering easier. -
Making fruit juice with Gelatin
First, add 150 ml of dragon fruit juice and 25 grams of Gelatin powder into a pot. If there are any areas where the Gelatin has not dissolved, you can add small amounts of cold water to help the powder absorb the water faster. Note that Gelatin has a good gelling effect, so you must first dissolve the powder in cold water before proceeding with the next steps.
Once you see that the Gelatin has fully absorbed the water, let the mixture sit for about 10 minutes, then place it on the stove to heat along with 100 grams of granulated sugar until it boils. Then reduce the heat and continue to cook for another 3 minutes before turning off the heat. While cooking, be sure to stir well to dissolve the sugar into the mixture and skim off any foam that rises (if any).
Note:- If you use Gelatin, you only need to use 12.5 small pieces of Gelatin and add them in.
- The principle of Gelatin is that it only dissolves in cold water, so you need to do this step carefully so that when heated, the Gelatin powder does not clump together and lose its gelling ability.

Brush a thin layer of cooking oil onto the molds to prevent sticking. After heating the fruit juice mixture with Gelatin, pour this mixture into the molds and let it sit for 2 – 3 hours for the candy to set.
Do the same with the remaining juice portions.

When the jelly has set and reached a certain chewiness, take it out of the mold and cut it into bite-sized pieces.
You can roll the jelly in sugar to make it tastier and to prevent it from sticking when placing it in jars.
