How to make Salted Egg Crab Sauce

  • Prepare and fry the crab

    When buying crabs, you should prepare them as per the above steps, then remove the apron, peel off the shell, cut off the crab’s lungs, and then cut them in half. For the crab claws, use a knife to smash them; doing so will help the crab absorb the flavors better, but be careful not to hit too hard, as it may crush the claws.

    Put everything on a large plate. Coat the crab evenly with a layer of cornstarch.

    Place a pan on the stove, add 100ml of cooking oil. Wait until the oil is hot, then add the crabs, frying them for about 10 minutes until they are just cooked, then remove them to drain the oil.

  • Make the salted egg sauce

    Wash the salted egg yolks. Then, steam them for about 15 minutes until they are just cooked, then take them out to cool.

    Once the salted egg yolks have cooled, use a fork to mash them finely to prepare for making the sauce.

    Place a pan on the stove, add 20ml of cooking oil. When the oil is hot, add 1 teaspoon of minced garlic, and when the garlic becomes fragrant, add the salted egg, then add 2 tablespoons of sugar and 1 tablespoon of fish sauce. Stir well until the mixture becomes thickened.

    After the salted egg sauce starts to thicken, add the fried crab and stir evenly for about 10 minutes for the crab meat to absorb the sauce.

How to distinguish between meat crabs and roe crabs to suit each dish:
  • Roe crabs: Roe crabs are female crabs with a square, large abdomen. Looking under the crab’s belly, if you see abundant red roe, it is a delicious, firm crab with a lot of roe.
  • Meat crabs: Meat crabs are male crabs with a small, triangular abdomen.

How to choose delicious, firm crabs:

  • Based on color: Delicious crabs have a dark shell, and the color between the shell and the top of the crab’s claws will be similar. Additionally, good crabs have a dark orange-brown color and shine on the underside of the claws and the crab’s belly; if the belly and the underside of the claws are pale or even bright white, it definitely indicates that the crab is still young, and the quality of the meat and roe is not high.
  • Pressing the crab’s abdomen: When you press the crab’s abdomen and feel it is firm, it indicates a crab that is firm and meaty. If this part is soft and flabby, it means the crab is underdeveloped and has little meat.
  • It is advisable to buy live crabs, with flexible joints, sharp spines.

Overview: If you see the entire crab is dark in color, with a firm abdomen tightly attached to the crab’s body, and the spines on the crab’s body and shell are still sharp, if the crab is still alive, its legs and claws move rhythmically and flexibly, indicating that it is fresh, delicious, and meaty.
How to clean crabs:

  • Soak the crab in a bowl of ice water to temporarily stun the crab so that it doesn’t lose its legs when cooking. Once the crab has stiffened, remove the binding, use a toothbrush to scrub the entire body of the crab, including the spaces between the legs,… thoroughly clean, then rinse the crab once more to remove all dirt and mud from its body.
  • If you don’t have time to clean the crab right away, after purchasing, place the crab in the freezer refrigerator, or place it on a piece of ice to keep the crab firm without killing it immediately, do not put the crab in water because crabs will die faster due to thermal shock.
