How to choose good tomatoes

  • You should choose tomatoes with smooth, shiny skin, firm and juicy with bright red color, and the stem still green.
  • Avoid choosing those that are bruised or have small black spots, or have uneven colors of both green and red.
  • If they feel too soft or too hard when touched, or if juice is leaking out, do not buy them as they may be spoiled.

  • Prepare the ingredients

    Green onions and shallots cleaned and chopped finely. Tomatoes washed with water and diced.

    Salted eggs boiled for about 5 – 6 minutes, peeled and cut into small pieces.

    Tip: You should add a little salt to the boiling water, which helps the eggs to be whiter and cleaner. But do not add too much as salted eggs are already salty.

How to choose good clams:

  • You should buy clams from reputable stores that sell fresh seafood.
  • Choose clams that are tightly closed, have a hard outer shell, are not chipped or cracked, and feel heavy in hand.
  • If you see clams slightly open, you can touch them, and if they close immediately, then you should choose them.

How to Cook Stir-fried Eggs with Clams

  • Prepare the clams

    After buying, clams are washed with clean water. Place them in a bowl of diluted salt water, adding a few slices of chili. Soak for about 1 – 2 hours; this way, the clams will be cleaned of sand and dirt inside.

    Tip: You can also soak clams in warm water at about 50 degrees Celsius; at this temperature, the clams will be stimulated to breathe more, quickly expelling the sand inside.
