How to prepare Soba noodles with teriyaki duck sauce

Prepare the duck breast
Buy duck breast and rub it with salt, pepper, and crushed ginger (or add a little white wine), letting it sit for about 30 minutes to remove the fishy smell.
Use a knife to lightly score the skin of the duck in a checkerboard pattern. Then, marinate the duck with 5g of salt and 5g of pepper.

Pan-sear the duck breast
Place a pan on the stove, but no oil is needed; put the duck in with the skin side down and pan-sear. When the skin is golden and crispy, flip the duck over, add 20g of ginger and 10g of sliced garlic, and fry together over medium heat for 10 minutes to ensure the duck is tender. Use a spoon to drizzle the duck fat over the skin to make it fragrant and even crispier.
After 10 minutes, take the duck out onto a plate and brush teriyaki sauce on top. After brushing, let the meat rest for 5 minutes, then slice it into thin pieces about 1cm thick.

You boil 180g of soba noodles for 5 minutes; when the noodles are cooked, you transfer them into a bowl of ice water to prevent them from becoming mushy.

Peel the carrots, julienne them, and soak them in a bowl of ice water to reduce their pungent smell. Wash the peas, and stir-fry them quickly for 2 minutes to keep them crunchy. Wash the green onions and chop them finely.

You place the noodles on a plate, topped with duck meat, along with carrots, peas, green onions, and sesame seeds. Drizzle an extra layer of teriyaki sauce to enhance the dish’s flavor.

How to choose good chicken thigh mushrooms
- The mushroom stem is thick, with a bright white color.
- The average length of the mushroom is usually 12 – 15cm. Avoid choosing mushrooms longer than 15cm, as they tend to be spongy and not flavorful.
- The cap of the mushroom is brown and not soft.
- Fresh chicken thigh mushrooms usually have a distinctive aroma similar to almonds.
How to make Chicken Thigh Mushroom Soba Noodles

Prepare the ingredients
Peel the onion, use half of it, and finely chop the onion. Cut off the flower part of the chives and finely chop the tops.
Wash the chicken thigh mushrooms, cut off the tails, and slice them thinly.

Making the Sauce
You add 20ml of oil to the pan, when the oil is hot, add finely chopped onion and stir evenly with 10gr of scallions and 3gr of pepper.
When the ingredients are cooked, add 25ml of soy sauce, 10ml of vinegar, 30ml of wine, and 10gr of sugar, and stir evenly over low heat for 5 minutes. Taste and adjust the sauce according to your family’s preference.
Tip: Do not leave the sauce on the stove for too long as it will thicken and become saltier, making the sauce less delicious.

Frying Chicken Thigh Mushrooms
Add 10ml of oil to the pan, then add 20gr of butter and melt it, add 2gr of salt and 2gr of pepper. When the oil is hot, add the chicken thigh mushrooms and fry until golden brown on both sides for 3 minutes.

Add the soba noodles to a pot of boiling water and cook for 4 minutes. When the noodles are cooked, place them in a bowl of ice water to maintain their chewy texture.
