How to choose good shiitake mushrooms

Fresh shiitake mushrooms should be soaked in warm water for about 1 – 2 minutes to clean off all dirt and sawdust.

Taro should be peeled, cut into chunks, and then steamed or boiled until cooked for about 20 minutes.
After steaming, take the taro out, put it into a mortar, and pound it finely together with cassava, adding about 1/4 tablespoon of salt while pounding for better flavor.
Dried mushrooms should be soaked in cold water for 2 – 3 hours until they expand and soften. Then, chop them finely.
Glass noodles should be cut into short pieces of 2 – 3cm using scissors.
Note: Remember to cut off the dry edges around the tofu skin pieces, leaving only the soft part inside for easier wrapping.
How to peel taro without itching
- The sap from taro can cause itching; you can wear gloves while peeling or pre-cook the taro before peeling (lightly boil).
- Lightly boil taro with salted water: Add taro and enough water to cover it, then add 2 tablespoons of salt. Boil on high heat until the water starts to boil, then pour the taro into a strainer, rinse with cold water to cool it down, and peel.
- Make sure your hands and taro are completely dry before peeling; do not wash the taro before peeling.
How to properly soak dried mushrooms
