How to choose good shiitake mushrooms

  • For fresh mushrooms, choose those with bright colors, a distinctive aroma, avoiding bruised mushrooms or those with a sour smell. If the cut oozes a milky white substance, it is a sign of poisonous mushrooms. Avoid mushrooms with dark spots or wrinkles on the cap, and do not choose slimy mushrooms. Fresh mushrooms will have a thin layer of web-like film on them.
  • Choose mushrooms with a firm stem and even color; if the mushrooms have opened, the gills should be evenly arranged, beautiful, and dry.
  • When selecting fresh shiitake mushrooms, choose those with medium-sized caps, tightly closed, and a slightly brownish-yellow color. If you see very dark brown mushrooms, do not buy them, as they may be poisonous.
  • How to choose good dried mushrooms: choose ones that are firm, not broken, bright in color, and free of white mold. Choose reputable sources to buy dried mushrooms to ensure safety.

  • Prepare the ingredients

    Tofu skin bought back should be rinsed briefly with water to remove dust, then use a knife to cut into pieces about 3 – 4cm long.

    Fresh shiitake mushrooms should be soaked in warm water for about 1 – 2 minutes to clean off all dirt and sawdust.

    Then rinse again with cold water and cut off the mushroom stems to help the mushrooms get rid of dirt, then cut the mushrooms in half.

    Note:

    • If fresh shiitake mushrooms are not available, you can also use dried shiitake mushrooms.
    • You can wash shiitake mushrooms with rice water to eliminate the strong smell of mushrooms and help them retain their natural flavor.

    Tip for soaking dried shiitake mushrooms quickly soft and clean from sand

    • Dried shiitake mushrooms should be rinsed with water to remove dirt, soak the mushrooms in hot water from 60 – 80 degrees Celsius for about 7 – 10 minutes to allow the mushrooms to expand.

How to choose good taro

  • You should choose taro roots that are of moderate size, when cut open they have a cloudy white color, showing many purple veins, these are usually the roots with many nutrients good for health.
  • Another note is to buy taro according to the season is best (usually harvested in November – December of the solar calendar).

  • Prepare the ingredients

    Tofu skin bought should be rinsed briefly with water to remove dirt, then cut into large rectangular pieces as shown.

    Taro should be peeled, cut into chunks, and then steamed or boiled until cooked for about 20 minutes.

    After steaming, take the taro out, put it into a mortar, and pound it finely together with cassava, adding about 1/4 tablespoon of salt while pounding for better flavor.

    Dried mushrooms should be soaked in cold water for 2 – 3 hours until they expand and soften. Then, chop them finely.

    Glass noodles should be cut into short pieces of 2 – 3cm using scissors.

    Note: Remember to cut off the dry edges around the tofu skin pieces, leaving only the soft part inside for easier wrapping.

    How to peel taro without itching

    • The sap from taro can cause itching; you can wear gloves while peeling or pre-cook the taro before peeling (lightly boil).
    • Lightly boil taro with salted water: Add taro and enough water to cover it, then add 2 tablespoons of salt. Boil on high heat until the water starts to boil, then pour the taro into a strainer, rinse with cold water to cool it down, and peel.
    • Make sure your hands and taro are completely dry before peeling; do not wash the taro before peeling.

    How to properly soak dried mushrooms

    • Before soaking mushrooms, you should rinse them briefly in cold water to clean off sand and dirt.
    • Soak the mushrooms for a maximum of 3 – 4 hours, do not soak them for too long as it may cause the mushrooms to produce harmful toxins.
    • Only soak dried mushrooms in cold water, do not soak in hot water as it will generate many substances that are not good for health.

  • Mix the filling

    Put the taro, cassava, shiitake mushrooms, glass noodles, 1/2 of the chopped green onion, 1/2 teaspoon of pepper, and 1/4 tablespoon of seasoning powder into a bowl.

    Use a spoon to mix well so that the ingredients blend together.

  • Wrap the tofu skin

    Place the cut tofu skin on a cutting board, use a spoon to scoop a moderate amount of filling onto the piece of tofu skin, then fold the two edges horizontally, and continue to fold vertically until you have a complete roll of tofu skin.

    Use string to gently wrap around the piece of tofu skin so that when frying, the roll does not come apart.

    Wrap one by one until all the filling is used up!

    Note:

    • If using regular string, remember to double the piece of string before wrapping around the roll to make it tighter!
    • Be sure to wrap gently so that the tofu skin roll does not get crushed.

    Place a pan of oil on the stove, ensuring the oil covers the bottom of the pan, wait for the oil to heat up and then drop each piece of tofu skin in to fry.

    Tofu skin cooks very quickly, so be sure to turn it continuously. When you see the tofu skin puffed, crispy, and golden brown, take it out and place it in another pan to continue braising.

    How to tell if the oil is hot: drop a small piece of tofu skin into the pan, and when you see it puff up and become crispy, the oil is hot.

  • Make the sauce

    In a bowl, add 1 teaspoon of sugar, 2 tablespoons of ketchup, 1 teaspoon of annatto oil, 1/2 tablespoon of seasoning powder, 1 teaspoon of soy sauce, and 2 teaspoons of chili powder.

    Use a spoon to mix well until the sauce is combined.
