How to Make Crispy Boneless Chicken Feet

  • Prepare the chicken feet

    Chicken feet are washed clean with diluted salt, removing all the sharp nails.

    Put a pot of water on the stove, wait for it to boil, then add the chicken feet and boil for about 10 minutes, then take them out and place them immediately in a bowl of ice water.

    Use the tip of a knife to make slits along each toe from the inside. Next, use your thumb and index finger to separate the skin from the ankle down to the toe, exposing the joints and pulling them outwards.

    Tip:

    • You can boil the chicken feet with a bit of salt and white wine to effectively remove the odor.
    • Initially, the chicken feet should be boiled over high heat; when the water boils again, reduce the heat.
    • You can use a toothpick to test the chicken feet; if it no longer has a pink color, you can take them out.

    Create a batter mixture with 100g of crispy flour and 70ml of water, stirring well until the flour dissolves evenly.

    • At first, you should fry on low heat; when the chicken feet turn light yellow, increase the heat, turn them evenly, take them out, and turn off the stove.

    Drizzle the sauce evenly over the previously fried chicken feet, and mix in a little crushed roasted peanuts.

    Create a dipping sauce mixture with 1/4 tablespoon of salt, 1/2 tablespoon of sugar, 3/2 tablespoons of vinegar, and 60g of mayonnaise, use a spoon to mix well until the mixture is dissolved.

How to Make Fried Chicken Feet with Fish Sauce

  • Prepare the chicken feet

    Clean the chicken feet with diluted salt, cutting off all the sharp nails.

    Place a pot of water on the stove, wait for it to boil, then add the chicken feet and boil for about 10 minutes, then take them out and immediately place them in a bowl of cold ice water.

    • The sauce thickens quickly, so you should stir the chicken feet regularly with chopsticks to help them absorb the seasoning better.

How to Choose Good Chicken Feet

  • Chicken feet should be purchased from reputable stores, ensuring food safety.
  • Choose chicken feet with a natural pinkish-white color, without any unusual colored spots such as green, red, or yellow on the skin.
  • If they feel slimy to the touch or have strange fluids leaking out, do not buy them.
  • Chicken feet that are water-injected appear uniform and attractive, plump, with the toes swollen; when squeezed, they feel soft. Normal chicken feet are small and unattractive, with four curled and bent toes.
  • There are two types of chicken feet: native and industrial; industrial chicken feet are preferred because they have more meat, making them convenient for preparing deboned chicken feet dishes.
  • You can buy pre-deboned chicken feet or buy them and debone them at home!
