Custard apple 1/2 kg Granulated sugar 100 g Unsweetened fresh milk 440 ml (2 packs) Sweetened condensed milk 1 can Sweet yogurt 2 cans Lemon zest 10 g

How to choose fresh custard apples

– When buying custard apples, choose those that are fresh, with a slightly yellowish skin, and have large, spaced-out spines. These are ripe fruits, with soft, juicy flesh that is easy to peel.

– You should buy custard apples in season because this is the time when they are the most delicious, contain fewer chemicals, and are reasonably priced. Custard apples are usually available year-round, but the period after the Lunar New Year is considered off-season, so they are quite scarce and expensive.

How to make Custard Apple Ice Cream

  • Cook the milk to make ice cream

    Put condensed milk into a pot, then add sugar and 2 packs of unsweetened fresh milk, and stir well. Adjust the sweetness to suit your taste.

    Place the pot on the stove, set to low heat, and stir the mixture until dissolved, without boiling the milk, just warm it up.

  • Mix the yogurt mixture with custard apple

    Peel the custard apple, remove the seeds, and take the flesh of the custard apple.

    Put the custard apple into a bowl and add 2 cups of yogurt, mash it well, and stir continuously so that the custard apple absorbs the yogurt.

  • Mix the milk mixture and custard apple yogurt

    Mix the cooked milk mixture and the custard apple yogurt mixture together. Stir well to blend the mixture.

    Grate a little lemon zest into the mixture.

    Pour the mixture into a container or ice cream mold and place it in the freezer refrigerator for about 7 – 8 hours before it can be used.

  • Prepare the Ingredients

    Use a zester to grate the lemon peel in advance.

    Crack the eggs and separate the egg yolks.

  • Make the cream base

    Put 500 ml of whipping cream, sugar syrup, fresh milk, and thick lemon jam into a pot and place it on the stove to cook over low heat. Stir the mixture well to dissolve evenly, and after about 5 minutes, turn off the heat.

    Note: Do not add lemon juice directly in this step as it will cause the milk to curdle.

    Put the egg yolks into a bowl and beat well. Gradually pour and beat the cooked cream mixture into the egg yolks. Add the grated lemon peel into the mixture and stir well. After pouring, mix the mixture evenly and cover with plastic wrap, then place it in the refrigerator for 24 hours.

    When the ice cream has rested long enough, take it out and add 100 ml of lemon juice to the mixture and stir well, then put it in the freezer; you can adjust the amount of lemon juice according to personal taste.

    Note: When squeezing lemon juice, prepare a bowl of cold water with a little sugar and a clean towel. After squeezing one piece of lemon, dip your fingertips into the prepared water; this will prevent essential oils from mixing into the lemon juice, causing bitterness.

    The lemon ice cream, once made, is fluffy and airy, with a creamy and fragrant flavor that is not too sour or bitter. This is a wonderful dessert after meals, especially on hot summer days.

    How to make the ice cream fluffier

    – Using an ice cream maker: Pour the mixture into the ice cream maker and let it churn for about 40 – 60 minutes, then freeze for 1 hour before serving.

    – Without an ice cream maker: Place the ice cream in a container and put it in the freezer for 30 – 60 minutes, then take it out and stir well, then return it to the freezer. After 2 – 3 hours, take the ice cream out and stir again. If you have more time, you can stir multiple times to make the ice cream fluffier.

  • Prepare the pineapple

    Cut off the top of the pineapple and use a spoon to scoop out the flesh.
