  • You should choose potatoes that are yellow in color as they will be tastier and more nutritious than those that are white.
  • Avoid choosing potatoes that have sprouted or have green skin, as these contain harmful substances for health.
  • Good potatoes are those that feel firm in hand, with smooth skin that is not bruised or has strange spots.
  • Do not buy those with dents or deep scratches, as these will spoil quickly if not used in time.

How to cook Stir-fried Potatoes with Tomatoes

  • Prepare the ingredients

    Wash the potatoes thoroughly, peel them, cut them in half, and then slice them thinly about 3 – 4 mm thick. Soak the potatoes in water for 15 minutes, changing the water a few times to remove the sap and prevent them from browning.

    • After peeling and cutting into bite-sized pieces, soak the potatoes in a basin of water mixed with 2 – 3 tablespoons of vinegar (or lemon). Keep the potatoes submerged in water for a few minutes, then remove and rinse with water before using.
    • Soaking peeled potatoes in water also helps prevent discoloration, and use the potatoes immediately to avoid them becoming bland.
    • If you accidentally let the potatoes brown, peel off the browned layer and soak them in water; the potatoes will turn white and be usable as normal. Another method is to put the potatoes in a pot, cover them with milk, and simmer on the stove for a few minutes to whiten them.
    • Additionally, while cutting potatoes, you should wear gloves to avoid itching from the potato sap!
