How to prepare Stir-fried Eggplant with Garlic

  • Prepare Ingredients

    First, cut off the stem of the eggplant and wash it thoroughly, then slice it thinly or cut it into wedges as you prefer. Next, soak the eggplant in diluted salt water for about 10 minutes to reduce bitterness and prevent browning.

    Tip: If the eggplant is large, you should peel it; however, if it is young, you can leave the skin on for a crunchier texture when eating.

    Peel the garlic, crush it, and then chop it finely. For the green onions, trim the roots, wash them, and chop them finely.

    You place a pan on the stove, wait for the pan to heat up, then add 2 tablespoons of cooking oil and sauté garlic until fragrant. When you see the eggplant starting to soften, you season it with 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, and a little ground pepper for flavor.

    You sauté for another 2 – 3 minutes, until the eggplant is soft, then turn off the heat and sprinkle a little green onion for a more attractive dish.

How to Prepare Stir-fried Eggplant with Betel Leaves

  • Prepare the Ingredients

    For the eggplant, you will cut off the stem, wash it thoroughly, cut it into wedges or thin slices, then soak it in diluted salt water for about 10 minutes before draining.

    Wash the pork belly with water and lemon to reduce the fishy smell, then slice it thinly. Depending on your preference, prepare the amount of betel leaves for stir-frying. For the betel leaves, remove the tough stems, wash them thoroughly, and chop them finely.

    You heat a pan on the stove, warming it with 1 tablespoon of cooking oil. When the oil is hot, add minced shallots and garlic to sauté until fragrant. Next, add the pork belly to the pan, stir-frying over medium heat until the meat is firm and releases fat.

    To let the meat absorb the flavor, season it with 1/2 teaspoon of seasoning powder, 1 teaspoon of fish sauce, and stir well for about 3 minutes until the meat is golden brown on the edges.

    Add the eggplant to stir-fry with the meat. Stir well to let the eggplant absorb the fat from the meat, and add 3 tablespoons of water to make the eggplant softer.

    When the eggplant starts to cook, add 1/2 teaspoon of seasoning powder, 1/2 tablespoon of oyster sauce, a bit of ground pepper, and sugar (to taste). Stir-fry for about 5 – 7 minutes until the eggplant is evenly cooked and the stir-fry sauce has reduced, then add the finely chopped betel leaves, quickly stir for about 1 minute until the betel leaves are just cooked, and then turn off the heat.

How to Cook Stir-Fried Eggplant with Meat

  • Prepare Ingredients

    You will wash the eggplant, peel it, and remove the stem, then soak it in diluted salt water for 10 minutes. Prepare a pot of water and bring it to a boil. When the water is boiling, add the eggplant and blanch it for 1 – 2 minutes, then remove and cut into wedges.

    Rub the pork with a little coarse salt and fresh lemon to eliminate the fishy smell, then rinse it clean and slice it thinly as desired.

    Wash the green onions and coriander, and chop them finely. Peel and chop the shallots and garlic.

    Then, add the eggplant to the pan, stir well, and add 3 tablespoons of water to help the eggplant cook quickly. Season with 1 teaspoon of fish sauce, 1/2 teaspoon of sugar, and a little pepper, and stir well (remember to adjust the seasoning to suit your family’s taste).

    Stir-fry until the eggplant is tender and the sauce has reduced, then turn off the heat and sprinkle with a little green onion and coriander to finish.
