How to make Dried jackfruit using an oven

  • Prepare the jackfruit

After buying the jackfruit, use a knife to cut it open and separate the jackfruit segments. Next, remove the seeds and continue to cut the jackfruit segments in half. If the segments are large, you can cut them into 3 or 4 pieces.

    Tip:
    • To prevent the jackfruit sap from sticking to your hands, you can apply a little cooking oil to your gloves before peeling the jackfruit.
    • To clean the knife after cutting the jackfruit, use a little cooking oil on the knife and then rinse it with water.

Add all the peeled jackfruit into the water to soak for about 10 – 15 minutes, then take it out and let it drain.

Tip: Soaking the jackfruit like this will help remove the sap, absorb flavors, and make it tastier.

Dry the jackfruit for the first hour at 130 degrees Celsius. After one hour, use chopsticks to stir the jackfruit evenly, then continue drying at 100 degrees Celsius for about 30 minutes.

    Tip:

    • To prevent the jackfruit from becoming dry and less crispy, do not stack the jackfruit too thickly while drying.
    • If you find the jackfruit is not dry or crispy as you wish, you can dry it for an additional 30 minutes at 110 degrees Celsius. On average, the drying time for jackfruit will be around 3 – 4 hours.

If you buy jackfruit that is not yet separated into segments and seeds, use a knife to peel it and remove the seeds. You can keep the slightly yellowish pieces as they are also usable.

How to choose delicious, sweet jackfruit

  • For dried jackfruit, you should choose to buy ripe yellow Thai jackfruit, avoiding overly soft ripe jackfruit as it will affect the quality of the dish.
  • To select good jackfruit, you can taste a little. Ripe and delicious jackfruit will have a sweet and soft flavor, without being fibrous or having an unusual taste.
  • Good ripe jackfruit usually feels heavy in hand. Ripe jackfruit has a fragrant and distinctive smell. Jackfruit that has been injected with chemicals often lacks the aroma of naturally ripened jackfruit.
  • Good ripe jackfruit typically has a skin that turns brownish-yellow, with the spines no longer sharp and spaced apart. If the skin is still green, the spines are sharp, and the spines are close together, then it is immature jackfruit that has been artificially ripened.
  • Good ripe jackfruit will have little sap and no white sap when cut open. When jackfruit has been injected with chemicals, the sap will be white and flow excessively when cut due to the effects of the chemicals.

How to separate jackfruit segments without getting sap on hands and knife

Avoid jackfruit sap sticking to hands

  • First, you can apply a little cooking oil to your palms before cutting or separating the jackfruit segments. This method will help reduce the sap sticking to your hands.
  • You can also dip your hands in rice before and after cutting the jackfruit or separating the segments. The rice bran will help wash away the sticky jackfruit sap on your hands.
  • Additionally, you can use a lemon to rub on the cut jackfruit and your hands or knife; this method is also very effective.
  • Other traditional methods include using kerosene to wash off jackfruit sap or chewing a bit of raw peanuts and applying them to the sticky sap to remove it.

Avoid sap sticking to the knife

  • You can put the knife in the freezer refrigerator; this will prevent jackfruit sap from sticking to the knife and make the sap on the knife harden and easier to peel off.
  • In addition, you can use a plastic bag to remove the jackfruit sap or use a cloth dipped in oil (cooking oil, kerosene, etc.) to wipe off the sticky sap on the knife.

How to preserve dried jackfruit

  • You need to let the dried jackfruit cool completely before placing it in a zip bag, food storage container or food jar and use it gradually.
  • It is advisable to store the dried jackfruit in a cool place, avoiding direct sunlight or excessive humidity.
  • With the above storage method, the dried jackfruit can be preserved for quite a long time, up to 5 – 6 months.
