How to Choose Fresh Eel
You should prioritize choosing eels that are of moderate size and have two distinct color sections, with the belly being yellow and the back being black. Since they are mostly caught from canals and ponds, their meat will be more aromatic and firm.
In contrast, very small eels will not taste good, or eels that are too large (with black bellies) are often farmed, making their meat more likely to be mushy and less aromatic.

Clean the eel
Clean the eel by removing the slime, rubbing salt all over the eel, rinse with lemon juice, and finally wash thoroughly with water.
You can also place the eel in a pot of warm water, cover it for about 10 minutes to help reduce the slime.
Then use a knife to cut the eel into bite-sized pieces.

Pound the ingredients
Clean the lemongrass, garlic, and shallots.
Put 2 stalks of lemongrass into the mortar, pound it, add 10g of garlic, 10g of shallots, 5g of chili, and continue to pound until finely crushed.

Marinate the eel
Marinate the cleaned eel with the crushed lemongrass and chili mixture, adding 1/4 tablespoon of seasoning, 1 tablespoon of grilling sauce, 1/2 tablespoon of chili sauce, 1/2 tablespoon of oyster sauce, 1/2 tablespoon of soy sauce, 1/2 tablespoon of red chili powder, 1/4 tablespoon of monosodium glutamate, 1/2 tablespoon of satay, 1/4 tablespoon of fish sauce, and 1/3 tablespoon of sugar.
Mix well and marinate the eel for about 1 hour to let the flavors soak in.

Grilling eel
Prepare red-hot charcoal, then place a clean grilling rack on top. After that, arrange the eel on top and grill until the eel is firm.
If you don’t have a charcoal grill, you can also grill the eel in an oven at 200 degrees Celsius for about 5 minutes, then take it out and brush the marinating sauce so the eel does not dry out, then grill for another 4 minutes.
