Prepare the red tilapia

- First, clean the fish by scaling and gutting it thoroughly. Be sure to cut out any clotted blood and cloudy white areas in the fish’s belly.

Prepare other ingredients
Peel and wash the ginger, then cut it into strips. Smash the green onion tops. Remove the dry, wilted leaves from the lemongrass, keeping the roots and slicing them finely.
Pick the bok choy, discarding any wilted leaves, cut off the root, and slice it in half. Clean the straw mushrooms, removing the stems, soak in salt water for 10 minutes, and then rinse clean. Wash the cilantro and cut it into sections.
Remove the roots from the onion, peel, wash thoroughly, and cut into small wedges. Peel and finely chop the shallots and garlic.

Marinate the fish
Marinate the fish with 1/2 tablespoon minced garlic, 1/2 tablespoon minced shallots, 1 tablespoon fried shallots, 2 teaspoons seasoning powder, 1/2 teaspoon monosodium glutamate, 1/2 teaspoon salt, and 1 teaspoon pepper.
Rub the seasoning on the fish body, stuffing shallots and garlic into the cuts and inside the fish’s belly. Marinate the fish for about 30 minutes for the seasoning to penetrate.
Take a plate, lay some lemongrass, ginger, and green onion on it, place the fish on top, then cover the fish with the remaining shallots, lemongrass, and ginger.

Place the fish plate in the steamer for 15 minutes until the fish is cooked and tender.

Boiling greens
Put a pot on the stove, boil 200ml of water, add 1 teaspoon of salt and 1 tablespoon of cooking oil, then add the greens and boil for about 2 minutes until just cooked.
Remove the greens and immediately place them in a bowl of cold water for 2 minutes to maintain crunchiness and bright green color. Then, take the greens out and let them drain in a colander before placing them on a plate.

Stir-frying mushrooms
Add 1 tablespoon of cooking oil to a pan on the stove, sauté 1 teaspoon of minced garlic and 1 teaspoon of minced onion until fragrant.
When the onion and garlic are golden and aromatic, add the straw mushrooms and onion to stir-fry.
Season with: 1 tablespoon of oyster sauce, 3 tablespoons of soy sauce, 1/2 teaspoon of salt, 1/2 tablespoon of sugar, and 1/2 teaspoon of monosodium glutamate.
Stir well to combine the seasonings and let them absorb into the mushrooms. Finally, add a few slices of fresh chili, taste and adjust the seasoning as needed.
Lastly, add the scallions and cilantro and stir for another 2 minutes before turning off the stove.
