Good chicken should have fresh-looking meat, no foul smell, and the skin should not have bruises or blood clots. Press the thigh meat with your hand to check; if the meat is firm, it’s good chicken, but if it’s mushy, slippery, or deformed, do not buy it.

Prepare the chicken and other ingredients
Chicken thighs / chicken wings: soak the chicken in diluted salt water, rinse thoroughly several times with water, pluck out any remaining feathers, and let it drain.
Garlic, chili, and onion should be washed, peeled, and minced.
Green onions should be washed and chopped small.

Grill the chicken
Preheat the oven to 200 degrees Celsius for about 10 minutes. Season salt and pepper evenly on both sides of the chicken thighs / wings. Place the chicken on a tray, grilling both sides at 220 degrees Celsius for about 20 minutes.
You can use a knife to make 1 – 2 small cuts on the chicken thighs to help the chicken absorb the seasoning and cook faster.

Making the sauce
Pour 1 tablespoon of cooking oil into the pan, sauté garlic and onion when the oil is hot, being careful to keep the heat low so the garlic and onion don’t get splattered by the hot oil.
When the garlic turns golden, add chili, 4 tablespoons of Worcestershire sauce, 1/2 tablespoon of vinegar, and 100ml of chicken broth / water. Stir well and cook until boiling.
When the mixture boils, add 2 tablespoons of chili sauce, 2 teaspoons of black pepper, 3 teaspoons of sugar, green onions, and mix well.
Dissolve 1 – 2 teaspoons of cornstarch with a little water and pour it into the pan. The more cornstarch you add, the thicker the sauce will be; add just enough to have a delicious sauce. Stir until the sauce thickens, cook for about 2 – 3 minutes and then reduce the heat.
