  • Shape: Choose cucumbers that are long, evenly shaped, and straight. You should avoid cucumbers that are too large, too small, or too immature as they may be bitter.
  • Cucumber skin: You should pay attention to the outer skin of fresh cucumbers, which will still have a layer of white powder; it’s best to buy those with small bumps on the surface.
  • Color: It is advisable to choose cucumbers that have a bright green color; dark green cucumbers may have a bitter latex at the tip.
  • Additionally, you should also choose cucumbers with stems, fresh, and with the flower end still intact, as these are young, fresh cucumbers that taste sweeter than the others.

How to choose fresh carrots

  • You should choose carrots that are orange-red, with a fresh surface and not too bumpy.
  • Additionally, you should only buy those that are proportionate in size, long, with a thick head that tapers down towards the tail.
  • Prioritize choosing carrots with the stem still tightly attached to the carrot body.

How to Prepare Vegetarian Cucumber Salad

  • Prepare the Ingredients

    When you buy cucumbers, wash them thoroughly with water and let them drain. Next, cut off both ends of the cucumber, about 1cm – 2cm from each end.

    Then, cut the cucumber lengthwise into quarters, and next, cut each section of cucumber in half, each piece about 5cm long – about the length of your pinky finger.

    After that, remove the seeds from the cucumber to prevent the salad from becoming soggy due to the cucumber juice. Then, cut the cucumber into small, bite-sized strips. Don’t cut them too small, as they will shrink when soaked.

    Wash the carrot, peel it, and then slice it thinly, about 0.2cm thick – roughly the thickness of a chopstick. Next, cut the carrot into strips equivalent to the cucumber.

    Peel the ginger, wash it, and then cut it into small strips. Do the same with the chili: wash it, remove the seeds, and then cut it into small strips.

    Next, add the cucumber and carrot into a large bowl, add 3 tablespoons of salt, and mix well. Soak the mixture for about 1 hour to draw out the water from the cucumber and carrot.

    After soaking, drain the cucumber and carrot, then rinse with water. Wash 2 – 3 times to reduce the saltiness. Next, drain and gently squeeze to remove excess water before placing them in the bowl.

  • Mixing cucumber dressing

    Add to bowl 2 tablespoons of fish sauce, 4 tablespoons of soy sauce, 8 tablespoons of sugar, 1 tablespoon of white vinegar, 2 tablespoons of rice vinegar (red vinegar), 2 tablespoons of chili sauce and stir well to combine the mixture.

    Add the dressing to the bowl of cucumber and carrot. Mix well to allow the seasoning to soak into the cucumber and carrot mixture. Soak the cucumbers for 10 minutes to let the seasoning absorb evenly.
