How to make Caramel Custard

Make the custard
Separate the egg whites from the yolks. Then add 3 egg yolks into a large bowl along with 304 ml of whole milk, 21 grams of cornstarch and whip the eggs until smooth and fine.
Cook the mixture over low heat, when the mixture thickens, remove it from the heat but continue to stir for another 30 seconds.
Note:
When cooking the mixture over low heat, you should do it carefully, do not let the egg mixture cook too much as it will make the mixture lumpy!
Put the mixture back on the stove, stir for 10 seconds until bubbles form, then add 190 grams of condensed milk, 320 grams of heavy cream, and 1 teaspoon of vanilla extract, mixing well.
Gradually pour the custard mixture into the popsicle molds, filling about 80% of the mold. Set the popsicle mold aside.

Make the caramel part
You need to add 2.5 teaspoons of gelatin powder with 60ml of water, add 1/3 teaspoon of salt, stir well, and cook over medium-low heat for a few minutes, stirring until the powder dissolves, then set the cooked gelatin water aside.
Put 160 grams of sugar and the remaining 30ml of water into another pot and boil on the stove for 5 – 6 minutes, gently swirling the pot but not stirring until the mixture turns a golden brown color, then remove from heat.
Continue to swirl the pot for another 30 – 40 seconds until the caramel turns a reddish-brown color, then add the gelatin water and stir well.

Pour the cream mixture
Pour the caramel into the ice cream molds until full and insert the ice cream sticks.
The caramel will slowly flow from the ice cream molds and create an eye-catching color. Place the ice cream in the freezer for 4 – 6 hours before taking it out to eat.
Tip:
- Use an ice cream stick or spoon to gently stir the mixture to create a more distinct color transition between the two colors.
- For stainless steel ice cream molds, after the ice cream has frozen, to remove the ice cream for enjoyment, soak the ice cream mold in warm water for about 30 seconds to separate the ice cream from the mold.
