How to Make Durian Jelly

  • Blend the durian flesh

    Add 200gr of durian flesh, 30gr of condensed milk, and 300ml of unsweetened fresh milk into the blender. Turn the machine on at high speed and blend the mixture until smooth.

  • Mix the dry ingredients

    Add 20g of sugar and 4g of agar powder into a bowl, then mix the ingredients well together.

  • Boil the agar mixture

    Strain the durian mixture through a sieve and then pour it into a pot.

    Place the pot on the stove over medium heat. Then add the agar powder mixture into the durian pot, stirring well until the powder and sugar dissolve. Heat the mixture until it boils, then turn off the heat.

    Pour the mixture into ice molds or flower-shaped molds.

    Finally, place it in the freezer for about 1 – 2 hours until the mixture is completely set, and then you can use it.

  • Blend the durian flesh

    Remove the seeds from the durian flesh. Next, add the durian flesh along with 100ml of coconut milk and 100ml of condensed milk into a blender or hand blender. Blend the mixture until smooth.

  • Make the 2-layer jelly mixture

    Prepare 2 pots, the first pot contains 1 liter of filtered water, and the second pot contains the remaining coconut milk and 0.5 liters of filtered water.

    Add 75 grams of sugar to each pot and stir well until the sugar dissolves.

    Next, add the durian mixture to the first pot (which only contains filtered water) and stir well to combine the mixture.

    Finally, add 10 grams of jelly powder to each pot and stir until the powder dissolves.

    Tip: You can add more sugar to adjust the sweetness to your taste.

  • Boil the mixture

    Place each pot on the stove, set the heat to medium. Stir while heating the mixture until the pot of jelly boils gently, and the jelly mixture thickens, then turn off the heat.

    Note: When stirring, you must stir close to the pot to avoid burning the bottom, which can affect the flavor of the jelly layer.

  • Pour into molds

    First, pour a layer of white jelly into the mold and let it cool, then place it in the refrigerator for about 20-30 minutes to let the jelly set.

    Note: While waiting for each jelly layer to set, always keep two pots of jelly on low heat to prevent them from setting too much.

    Next, slowly pour a layer of yellow jelly into the mold with a thickness similar to the white layer, then place it in the refrigerator to let the yellow layer set. Continue this process, alternating between a white layer and a yellow layer until all the jelly mixture is used up.

    Finally, put the jelly in the refrigerator for about 1 hour before it can be used.

    Tips to prevent the jelly layers from separating:

    • Let the coconut jelly layer cool and set before pouring the durian jelly layer on top; otherwise, they may mix together too easily.
    • You should also not let them set too much, as the final product might separate and not stick together.

How to choose delicious durian

  • Shape: Choose fruits that are plump and evenly shaped.
  • Color: Choose fruits with a moss green or slightly yellow moss green skin.
  • Stalk: It’s best to choose fruits with fresh stalks that have a strong aroma. You can gently press with your finger to test; if the stalk feels wet, it is still fresh.
  • Durian spines: Choose fruits with fresh-looking spines, slightly rounded tips, firm green color, and well-spread out.
  • Durian flesh: Naturally ripened durian separates easily, with golden yellow, smooth, and rich flesh. In contrast, chemically treated durian is harder to separate, often has a gritty texture, and is light yellow in color.
  • Aroma: Naturally ripened durian has a strong fragrance that can be detected from a distance. Chemically treated durian will lack the distinctive strong aroma and may sometimes have no smell at all.
  • Sound when tapping the fruit: If tapping the fruit produces a popping or thumping sound, it indicates that the flesh is thick, and the seeds are small.

How to pour agar without it leaking water

  • Follow the correct ratio of water to agar according to the recipe.
  • For crispy agar powder, soak it in cold water for about 30 minutes to let it expand, then stir gently before putting it in a pot to cook.
  • Wait until the agar powder is completely dissolved before adding ingredients like milk, coconut milk, etc., into the pot.
  • Avoid choosing sour fruits for making agar as the sourness can easily cause it to leak water.
