How to choose red beans

  • Should choose beans that are bright red, free from pests, and without signs of mold or unpleasant smells.
  • Should choose beans of moderate size so that after cooking, the beans achieve the right softness and delicious buttery flavor.
  • Should not choose very large beans, as these beans often do not taste good, have fewer nutrients than smaller beans, and especially often create a slight astringent taste when eaten.

  • Blend the red beans

    First, pour the can of red beans through a sieve, then wash under running water and drain. Next, blend the red beans with 35ml of water.

    First, add 30g of glutinous rice flour into a small bowl with 2 tablespoons of water, and stir well until the flour is completely dissolved.

    Heat a pan on the stove, add the ground red bean filling along with 35g of sugar, 2 tablespoons of cooking oil, 1/8 teaspoon of salt, 1 teaspoon of vanilla extract, and the mixture of glutinous rice flour.

    Stir and mix the mixture over medium heat for about 15 – 20 minutes until the filling binds together into a smooth and sticky mass that no longer sticks to the pan.

  • Mixing the cake dough

    In a large bowl, combine 420g of glutinous rice flour, 35g of rice flour, 110g of sugar, 1/4 teaspoon of salt, and 5g of baking powder, then mix well.

    Next, gradually add 350ml of boiling water into the flour mixture, while stirring to bind the ingredients together. Then, use your hands to knead until the dough forms a smooth and sticky mass.

  • Shaping the cake

    Divide the dough for the outer layer and the red bean filling into 17 portions and roll them into balls.

    Next, use your hands to flatten the outer layer dough, add the filling in the center, then pinch the edges of the dough together to seal it, rolling it into a ball. After that, roll the cake ball in a layer of white sesame seeds to finish.

    Repeat this process until all the remaining ingredients are used up.

  • Fry the Cake

    Put a pot of oil on the stove and heat it until boiling; when the oil starts to bubble lightly, drop the cakes in and fry on medium heat, turning them continuously until the outside is golden and crispy, and the cakes float to the surface indicating they are cooked.

When the cakes are done, remember to turn the heat up high before removing the cakes to a plate lined with paper to absorb the oil. This method will help prevent the cakes from soaking up oil inside, making them crispier and tastier.
