How to choose good chicken
- Choose chickens that are reddish-pink, with no bruises or dark spots on the skin. Avoid chickens that have darkened skin, as those are likely to have died before processing.
- The chicken should have a slender body, light yellow, thin, smooth skin, and high elasticity, with darker yellow areas in some places like the breast, wings, and back.
- You can press on the (thigh, breast) to check if the chicken has been injected with water. If the chicken feels mushy, slippery, or deformed, do not buy it.
- When buying frozen chicken, you should choose from reputable supermarkets or stores to ensure product quality.
How to choose good water spinach
- Choose water spinach with stems as thick as chopsticks, with small and slightly firm tops.
- The leaves of water spinach should be small and bright green. Avoid buying water spinach with yellow leaves, bruised, or with white spots.
- Do not choose water spinach with unusually thick stems, shiny leaves, or stems that snap easily.

Prepare and marinate the chicken
Buy pre-prepared chicken from the market, wash it several times with water, and let it drain.
Add to the chicken 1/2 teaspoon of seasoning, 1/2 teaspoon of pepper, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of five spice powder, 1 tablespoon of fish sauce, 1 teaspoon of soy sauce, and 1 teaspoon of oyster sauce, mix well, and marinate for 1 hour.
How to prepare chicken to reduce odor:- Remove the oil gland, fat, and blood clots inside the chicken.
- Then use crushed ginger to rub on the chicken for 10 minutes, then rinse with water several times.

Fry chicken
Place a pan on the stove, add 30ml cooking oil. When the oil is hot, add the marinated chicken and fry until golden brown on both sides, then remove it, let it cool, and cut into bite-sized pieces.

Remove the damaged parts of the water spinach, wash it clean, and break it into bite-sized pieces.
Boil a pot of water with 1 teaspoon of salt, when the water is boiling, add the water spinach and blanch for 2 – 3 minutes, then remove the spinach into a bowl of ice water for 5 minutes, then take it out and let it drain.
Peel and wash the carrot, then shred it finely. Cut the chili into strips. Wash and chop the coriander and mint leaves.
Tip: Soaking water spinach in ice water will help it stay crisp and retain its green color. -
Mixing the salad
Add water spinach, carrot, chili, coriander, and mint leaves that have been prepared into a bowl. Add 2 tablespoons of sugar, 3 tablespoons of lime juice, 3 tablespoons of fish sauce, and 1 tablespoon of minced garlic, mix well, and marinate for 10 minutes.
