Some ingredients for cooking dishes
- Dried chili is an essential spice in the dishes of Sichuan – China with a pungent spicy flavor, used in Sichuan spicy hot pot and contributes to the color of the dish.
- Chinese chili powder is made from dried chili peppers ground into powder, used as a spice to add a sharp spicy flavor to dishes.
- Sichuan hot bean paste (spicy bean paste) is a chili paste made from horse beans and fermented soybeans, has a salty and spicy taste, fragrant with the smell of fermented paste. This is an indispensable key ingredient in Sichuan cuisine.
How to choose good beef
- Good beef has a bright red color, fine texture, and firm yellow fat. Pressing on the meat reveals resilience, and it shouldn’t stick to your hand. The meat has a distinctive smell, not a foul odor.
- Do not buy soft, mushy pieces of meat, dripping with juices, or with strange smells.
- If the meat is dark red, with dark yellow fat, and coarse texture, it indicates old beef, which is very tough.
How to cook Sichuan Boiled Beef

Prepare the ingredients
Wash the beef, then cut it into bite-sized pieces, not too thick or too thin.
Place the beef in a bowl and marinate with 1 egg white, 1 teaspoon of cornstarch, 1 teaspoon of pepper, and 2 teaspoons of white wine, then mix well and marinate for about 15 minutes.
Cut off the roots of the chives and green onions, wash them clean, and cut them into pieces about 5cm long.
Wash the cilantro and chop it finely. Wash the ginger and slice it.
Peel the garlic, smash it, and chop it finely. Wash the bean sprouts and drain them.

Stir-fry the ingredients
Place a pan on the stove, turn on medium heat to heat the pan, then add 2 tablespoons of oil and sauté 1/3 of the minced garlic and 1/3 of the sliced ginger until fragrant.
Next, add the chives and stir-fry for about 2 minutes, then add the bean sprouts and season with 1/2 teaspoon of salt, 1 teaspoon of pepper, 1/2 teaspoon of seasoning powder, and 1 dried chili, stir well for the ingredients to absorb the spices, then turn off the heat.

Tips for Tenderizing Beef
There are many ways to tenderize beef, you can apply one of the following methods:
- Tenderize beef by soaking it in water with a small amount of baking soda (sodium bicarbonate) for about 3 hours. For every 10 grams of baking soda, you can soak 500 grams of beef.
- Use a specialized meat mallet to pound the meat, which will make it softer, flakier, and much easier to chew. If you don’t have a mallet, you can use a sharp knife to cut the meat into long, thin strips, being careful not to cut too deep as this will crush the meat.
- Dry tea leaves and place them in a mesh bag, then drop the bag of dry tea leaves into the pot of beef while cooking. The beef will become tender and delicious without being tough.
- Lemon juice or yogurt contains a lot of acid; when cooking beef, squeeze a little lemon juice or add a bit of yogurt to the pot. The acid helps the muscle fibers of the beef to relax and break down, making the meat tender quickly and not tough.
