How to choose fresh squid
- Fresh squid will have a dark brown head, not pale, and the body will be opaque white like milk and usually has shiny skin.
- Fresh squid will feel firm and have very good elasticity.
- Fresh squid’s eyes are usually very clear and you can see the pupils inside; if the squid’s eyes turn cloudy, it is no longer fresh.
- The squid’s tentacles must be intact and firm. The squid’s beard should be tightly attached to the head; if it is soft and easily detached, the squid has gone bad.
How to prepare Vinegar Dipped Squid

Prepare the squid
When you buy the squid, peel off the skin and cut the squid in half.
Wash the squid with white wine and a few slices of smashed ginger, gently squeeze to clean the squid better, then rinse with clean water.
Use paper towels to absorb the remaining water on the squid, then cut the squid into small pieces.
Make shallow crosshatch cuts on the squid body (not too deep) to help the squid cook faster and look more appealing.
Next, put the cut squid into a bowl and add 1 teaspoon of sugar, then squeeze until the squid releases foam. After that, rinse the squid with water and let it drain.

Prepare the other ingredients
Peel the onion, wash it clean, and cut it into small wedges.
Wash the lemongrass, smash it, and cut it into 3 – 4 cm pieces.
Peel the ginger, rinse it briefly with water, and cut it into thin strips.
Peel the shallots and cut them into thin slices; you should cut quickly to avoid eye irritation. Rinse the chili with water and cut it into thin slices.

Cook the vinegar water
Place a pot on the stove and add 1 tablespoon of cooking oil, then add sliced shallots and fry until golden and fragrant.
Add 500ml of fresh coconut water to the pot, add 80ml of vinegar, 3 tablespoons of sugar, and 1 teaspoon of salt, then stir well to dissolve.
Once it reaches a gentle boil, add the prepared ginger, lemongrass, onion, and chili to the pot and continue boiling vigorously.
After that, you can adjust the seasoning to suit your taste.

If you eat less, you can scoop the vinegar into a smaller pot and slowly heat it up to enjoy.
