How to cook Steamed Flan Sponge Cake without an oven

Make caramel
Place a pan on the stove, add 45gr of sugar and 30ml of water. Cook the mixture over medium heat until the sugar boils and turns a brown color.
Next, pour the caramel into the cake mold and swirl it around to evenly distribute the mixture.

Mixing the egg and milk mixture
Place a pot on the stove, add 400ml of unsweetened fresh milk, and 45gr of sugar. Stir evenly over medium heat until the sugar completely dissolves.
Beat 3 eggs, then strain the eggs through a sieve into the bowl of fresh milk and stir the mixture well.
Strain the mixture you just stirred through a sieve two more times to remove any residue.

Mixing the cake batter
Beat 2 egg yolks, then add 30gr of sugar, 20ml of fresh milk, and continue stirring until the sugar dissolves.
Next, add 60gr of flour and stir well until the mixture is smooth.
Finally, add 20ml of cooking oil and stir the mixture one more time to complete.

Whipping Egg Whites
Put 2 egg whites and a little salt into a bowl, use a whisk to beat quickly until the eggs are fluffy and form stiff peaks with clear trails, lifting the whisk to create a peak that stands upright without drooping is the desired result.

Mixing Batter with Egg Whites
Divide the whipped egg whites into three parts. First, add one part of the whipped egg whites to the cake batter mixture, then gently fold everything together with a whisk.
Next, pour the mixture you just combined into the remaining whipped egg whites, then use a spatula to gently fold the mixture from the bottom to the top. Bring the spatula down to the bottom of the bowl, lift the heavier ingredients up, and fold them to the side. Continue this process until the mixture becomes smooth.
Note: If you mix too vigorously, it will cause the egg whites to deflate, break the bubbles, and the cake will rise poorly. -
Pour the mold and steam the cake
First, pour the flan mixture into the cake mold, then continue to pour the sponge cake batter on top.
Next, tightly cover the pot’s mouth with a layer of aluminum foil.
Tip: Because the sponge cake batter is light and airy, it will not sink when poured over the flan.Prepare a pot of boiling water, place a rack inside, then put the cake mold in and cover it tightly.
Steam the cake on low heat for 45 – 60 minutes until the cake is cooked.
When the cake is cooked, let it cool completely and then refrigerate for 2 – 4 hours.
