How to make Durian Panna Cotta
-
Blend durian
Put the durian flesh into the blender until it is smooth.
-
Boil the milk
Prepare a small pot, add 1/2 of the milk, whipping cream, and sugar, place it on the stove over low heat, stirring gently until the ingredients dissolve into each other. Turn off the heat and set aside.
Prepare another bowl, add the remaining milk and gelatin powder, and steam until the powder completely melts.
-
Mix and pour the mixture into cups/molds
Prepare a mixing bowl, add 2 portions of the milk mixture, add the durian, and mix well in one direction (from left to right or vice versa) until it forms a smooth mixture.
Mixing the mixture in one direction will help the ingredients inside blend more quickly and prevent clumping.
Pour the mixture into a glass cup or container of your choice, and place it in the refrigerator for about 5 hours until the mixture sets.

What is Panna Cotta?
Panna Cotta (which means “cooked cream” in Italian) is a dessert made from cream, milk, and sugar with gelatin, then waiting for the mixture to set.
The first recipe for Panna Cotta originated in Northern Italy when people used to set cream with fish bones (the collagen in fish bones will thicken the cream) and enjoy it.
Nowadays, gelatin is commonly used to prepare Panna Cotta, resulting in a dessert that has a smooth texture, melting gently in the mouth.
Tips for successfully making durian Panna Cotta
During the cooling process of Panna Cotta, you may encounter the issue of the dessert separating into layers between the milk and cream. However, this is completely normal!
To solve this problem and avoid layer separation, you just need to let the mixture sit at room temperature and whisk it well once more before pouring it into the mold.
