How to prepare Grilled Pork Noodles with Spring Rolls

Prepare and marinate the meat
Pork shoulder and back fat should be washed clean with salt water to remove all dust and dirt from the meat, then rinse again with clean water and let it drain.
Effective ways to remove the smell of pork
- Blanching in boiling water: After cleaning the pork, place it in a pot with enough water to cover the meat. Boil the water for 2 – 3 minutes, then remove the meat and rinse it with clean water.
- Soaking in diluted salt water and ginger: Put the cleaned pork in a basin containing diluted salt water and a few smashed ginger slices, then soak for 25 – 30 minutes. After that, remove the meat and rinse it clean.

Next, you cut the meat in half and proceed to slice the meat into thin pieces with a width of about 2 – 3 finger joints.
The back fat should also be sliced very thin!
Wash the lemongrass and chop it finely. Wash the chili, remove the stem, and chop it finely.
Wash the shallots and garlic, peel them, and mince them.
Put the sliced meat and fat into a bowl and add 1 teaspoon of grilled meat sauce, 1 teaspoon of shrimp paste, 1 teaspoon of chili sauce, 1 teaspoon of oyster sauce, 1 teaspoon of ketchup, 2 teaspoons of soy sauce, 1 teaspoon of red coloring oil and mix well.
Add to the bowl 1/2 teaspoon of MSG, 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of pepper, 1/2 teaspoon of five-spice powder along with 1/2 of the minced garlic, 1/2 of the minced chili, all the lemongrass, and minced shallots, and mix well.
Marinate the meat for 1 hour to let the flavors soak in.
After marinating, fold the piece of meat in half and skewer it onto a stick, then skewer the fat onto the stick.
Continue alternating between 1 folded piece of meat and 1 piece of fat until the skewer is full.

Prepare other ingredients
Green onions discard damaged leaves, wash clean, and cut small. Lemon wash clean, drain, squeeze to get juice into a bowl.
Mung beans rinse well and put into a pot, adding just enough water to cover, then cover the pot.
Cook the beans on low heat for about 15 minutes; when the beans are cooked, turn off the heat.
Sweet potatoes and taro should be peeled, washed clean, and drained. Both types of potatoes should be cut into very thin pieces and then cut into long strips.
Shrimp should have their heads removed, washed clean, then peeled and the dark vein removed from the shrimp body.
Quick way to devein shrimp
- Count back from the tail of the shrimp to the second groove between the two shell segments, insert a toothpick through this spot and gently pull the dark vein out.
- Use a toothpick to grab the dark vein at the head of the shrimp and gently pull it out with your hand.
How to peel taro without itching
- When you just buy taro, do not wash it; keep your hands dry and peel the taro.
- Then soak the taro in diluted saltwater for 10 minutes and remove it to process.

Grilling the meat
When the charcoal is completely burned, wait for the smoke to clear, then gradually place each skewer of meat to grill for about 10 – 15 minutes.
When one side of the meat is cooked, turn the meat over and continue grilling for another 10 minutes until the meat is dark golden brown and fragrant, then remove the meat.

Mixing the spring roll filling
Add the shredded sweet potato and taro along with minced lean meat and cooked mung beans to a bowl.
Next, add 1/2 teaspoon of seasoning powder, 1/2 teaspoon of seasoning granules, 1/2 teaspoon of pepper, and 1 teaspoon of sugar to the bowl, then mix all the ingredients together.

Roll and fry spring rolls
You lay a piece of rice paper on the cutting board or plate, then add 1/2 teaspoon of spring roll filling in the center and follow it with one shrimp.
Next, fold the two edges and roll it up to create a beautiful spring roll.
Heat a pan on the stove, add 1.5 cups of cooking oil to the pan, and heat over medium heat.
When the oil is hot, gradually add each spring roll and fry for about 10 – 15 minutes until the spring rolls are cooked and golden brown, then remove them.

Make dipping sauce and scallion oil
Add 6 teaspoons of sugar, the juice of 2 lemons, 6 teaspoons of boiling water, and 6 teaspoons of fish sauce to a bowl and stir well to dissolve the sugar.
Next, add the remaining minced chili and garlic and stir again.
Add the chopped scallions to a bowl, then add 1.5 tablespoons of hot oil from frying the spring rolls and mix well.
