Duck 1.5 kg Seasoning 1 tablespoon Garlic powder 1/2 tablespoon Chili powder 1/2 tablespoon Ginger powder 1/2 tablespoon Lemongrass 5 stalks Chili 1 piece Garlic 1/2 bulb Annatto oil 2 tablespoons Sugar 1 tablespoon Fish sauce 2 tablespoons Curry powder 1 teaspoon

How to make Fried Duck with Lemongrass and Chili

  • Prepare the duck meat

    Clean the duck meat as above, marinate with 1/2 tablespoon of seasoning, 1/2 tablespoon of garlic powder, 1/2 tablespoon of ginger powder, and 1/2 tablespoon of chili powder, mixing well for the duck to absorb the spices evenly. Marinate for 15 minutes.

    Note:

    • You can also marinate the duck overnight in the refrigerator for the meat to absorb the spices more deliciously!
    • Depending on your family’s taste, you can adjust the amount of chili powder and ginger powder as you like!

    Chop garlic, lemongrass, and chili finely.

    Tips for cutting chili without burning your hands:

    • Put the chili in the freezer for about 10 minutes before cutting.
    • You can also apply a layer of cooking oil on your hands, this is also a good tip to avoid the burning sensation when cutting chili.

    In a bowl, add 2 tablespoons of annatto oil, 1 tablespoon of sugar, 2 tablespoons of fish sauce, and 1 teaspoon of curry powder, and mix well until the mixture is dissolved.

    Put the marinated duck into a frying pan with oil over low heat. You should place the skin side down and while frying, scoop the oil to drizzle evenly over the top surface of the duck meat to help it brown evenly.

    Tip for you: When frying, if you’re afraid of getting splashed by oil, add a few grains of salt or 1 – 2 chili peppers into the oil.

    Turn the duck meat pieces regularly while frying to ensure all sides are evenly browned. Remove and set aside.

  • Making Fried Lemongrass Chili Duck

    Add 2 – 3 tablespoons of cooking oil to the pan, wait for it to heat up and add the lemongrass, sautéing until fragrant. Add half of the chopped chili and sauté until golden. At this point, add the sauce you made earlier, stir well, and adjust the seasoning to taste.

    When the sauce thickens slightly, add the remaining chopped chili and stir well. Add the previously fried duck and mix well to ensure the duck absorbs the sauce, lowering the heat.

    When you see the sauce completely thickened and the duck well absorbed the flavor, turn off the heat.

How to make Fried Red Sauce Duck

  • Prepare the duck meat

    Clean the duck meat as above, then cut it into small, bite-sized pieces.

    Add onion, lemongrass, garlic, dried onion, red sauce, seasoning, pepper, monosodium glutamate, fish sauce, black soy sauce, oyster sauce, and honey to the duck meat and mix well. Marinate for about 1 hour.

    Note: you can marinate the duck meat overnight in the refrigerator to allow the meat to absorb the spices and save time!

    Chop the onion, lemongrass, garlic, and dried onion finely.

    Tip for cutting onion without tearing up:

    • You can chew gum or eat anything while cutting, as the mouth movement helps stimulate breathing through the mouth, which will limit the onion’s juices from reaching your eyes.
    • You can also put the onion in the refrigerator for about 20 minutes before cutting to reduce the tearing effect!

    Put the marinated duck meat into the hot oil pan, frying on low heat, stirring the pieces of meat until they are cooked and golden brown.

  • How to store duck meat: You can put it in a plastic bag and store it in the refrigerator at a temperature of 4 degrees Celsius, but you should loosen the bag a little, and do not wrap the duck meat too tightly.
