How to choose fresh tofu skin

  • A good piece of tofu skin has a characteristic deep yellow color, feels soft and smooth to the touch, and has a natural bean aroma.
  • You should avoid choosing tofu skin that smells spoiled, has signs of mold, or is damaged to ensure health when using.
  • You can buy tofu skin at supermarkets or reputable stores, or you can make it yourself at home following TasteVN’s instructions.

How to choose good dried mushrooms and snow fungus

  • Good snow fungus has a transparent white color, the fungus is intact, not chipped, and does not show any white or green mold.
  • You can find good snow fungus at reputable vegetarian food stores.
  • For wood ear mushrooms, you should choose large ears, thick caps, and few small mushroom stems. The top of the mushroom should be a dark amber color, slightly shiny, and the underside should have a coffee milk color; carefully observe if the mushrooms have white mold.

How to make Vegetarian Sausage with Lemongrass and Mushrooms

  • Prepare the ingredients

    Vegetarian ribs, dried wood ear mushrooms, and dried snow mushrooms should be soaked until soft. Cut off the dry stems of the wood ear and snow mushrooms, then rinse them with water once more to clean. After the vegetarian ribs are soft, chop them finely.

    Lemongrass and bird’s eye chili should be washed and chopped finely.

    Basil leaves and rice paddy herb should have any wilted leaves removed, washed clean, and chopped finely.

  • Wrap the filling

    Add all the ingredients including vegetarian ribs, chopped tofu skin, wood ear mushrooms, snow mushrooms, chili, lemongrass, green pepper, basil, and rice paddy herb into a bowl and mix well.

    Then add 1 tablespoon of vegetarian seasoning, 1/2 tablespoon of sugar, 1 tablespoon of vegetarian fish sauce, and 2 tablespoons of potato starch, and mix again to ensure the seasoning is evenly distributed.

    Lay a sheet of parchment paper and place fresh tofu skin leaves on top, add the filling, and roll it up. Wrap it in a layer of aluminum foil to keep the vegetarian sausage tightly bound.

    Tip: Because the tofu skin leaves are very soft, roll gently to avoid tearing the tofu skin leaves.

    You put all the rolled vegetarian sausages into the pot and steam them for 30 minutes from the time the water boils.

    After steaming, let the vegetarian sausages cool down, then remove the parchment paper and aluminum foil.
