Braised pork with fermented tofu, a unique dish that is sure to enrich the meal menu of many families. Let’s get cooking right away with this delicious braised dish to treat the whole family!
Ingredients for Braised Pork with Fermented Tofu For 4 people
Pork belly 500 gr Garlic 10 gr Red onion 10 gr Hot chili 3 pieces Fermented tofu 370 gr Seasoning powder 1/2 tablespoon Yellow sugar 1/2 tablespoon Fish sauce 1 tablespoon MSG 1/3 tablespoon
Note: You can also use a regular pot to braise the meat, however, using a clay pot will make the dish more flavorful, retain heat better during cooking, and help the meat become tender and delicious.
Tips for choosing good pork suitable for braising:
- For braising, you should choose pork belly, as this type of meat will give you soft and fatty pieces that taste very good.
- You should choose pieces of meat that have thin skin, white fat, and a lot of meat. The meat should be fresh pink, firm texture, and have no unpleasant smell.
How to prepare Braised Pork with Fermented Bean Sauce

Prepare the pork
When buying pork, use salt to rub on the meat, then rinse with clean water to eliminate the fishy smell, making the dish more fragrant and flavorful.
Tip for cleaning pork effectively, without odor:
- When purchasing pork, you need to scrape off the outer hair layer, or you can ask the seller to do it for you.
- Soak the pork in salt water (about 1 tablespoon) for about 15 minutes. After soaking, rinse thoroughly with cold water about 3 – 4 times.
- You can also wash the pork with a mixture of salt + vinegar to better eliminate the pork smell!
Then rinse well and cut into bite-sized cubes about 2cm.

Prepare other ingredients
Peel the garlic and mince it finely. Peel the shallots and slice them thinly.

Marinate the meat
The pork belly, after being cut into bite-sized pieces, should be marinated with 1/2 tablespoon of seasoning, 1/2 tablespoon of brown sugar, 1 tablespoon of fish sauce, 1/3 tablespoon of monosodium glutamate, 3 small pieces of fermented tofu, and 2 tablespoons of the fermented tofu liquid.
Crush the fermented tofu until smooth, mix the meat evenly with the seasoning and marinate for 30 minutes.

Cook the meat
Place a clay pot on the stove. Wait for the pot to heat, then add 1 tablespoon of brown sugar and 2 tablespoons of cooking oil, using chopsticks to stir evenly until the sugar dissolves and turns a caramel color.
Note: when the sugar starts to turn caramel color, immediately reduce the heat to low, as it should not be cooked too long to avoid bitterness.
Continue by adding minced onion, garlic, and 3 small chili peppers to sauté until fragrant.
When the onion and garlic are aromatic, add the marinated meat and stir-fry until the meat is sealed, about 5 minutes.
Add 100ml of water from the bowl used for marinating the meat earlier, swishing it around to extract any remaining seasoning. Pour this water into the pot.
Cook the pork on low heat until the sauce reduces and the seasoning infuses into the meat for about 20 minutes. When the sauce thickens, add 1 tablespoon of green pepper to the pot.
Turn off the heat, plate the dish, and garnish for presentation to complete.

Note:
- The leftover fermented bean curd should be carefully covered and stored in a dry, cool place, away from direct sunlight and damp areas.
