- When buying pears, you should choose those that are round, evenly shaped, with smooth skin, few spots, and light color. The skin should not have bruises or dents.
- Buy pears that have a deep stem at the bottom, with a small and smooth stem. These are the pears that are juicy, sweet, and crunchy.
- Do not buy pears with large, shallow, and non-round stems as they contain less juice and are very bland.
- Avoid choosing pears with unusual shapes, dents, rough skin, many brown streaks, black spots, and darker colors.
Where to buy green bean starch?
- Green bean starch is a type of white, fine powder that is odorless and resembles corn starch or tapioca starch.
- After cooking with green bean starch, the dish will be thick like jelly and have a chewy, crispy texture similar to agar.
- You can buy green bean starch at reputable food stores, supermarkets, or find it on e-commerce sites.
- Additionally, if you cannot buy green bean starch, you can use tapioca starch as a substitute so that the pear jelly can set.

How to make pear jelly

Prepare the pears
After buying, soak the pears in diluted salt water, wash them several times with clean water, and then let them drain.
Next, peel, remove the seeds, and cut the pears into small bite-sized pieces.

Puree the pear
Put the chopped pear into the blender, add 40g of sugar and 60ml of water, then blend until smooth.
After blending the pear, strain the pear juice through a sieve to obtain a smooth pear juice.

Cook the pear jelly
Put 60g of green bean starch into a bowl and add 60ml of water, stir well until the starch is completely dissolved.
Place a pan on the stove, set to medium heat, and add the filtered pear juice, bringing it to a boil.
When the pear juice starts to simmer, reduce the heat low and add the prepared green bean starch, stirring continuously for about 7 – 10 minutes until the starch combines with the pear juice to form a thick jelly mixture, then turn off the heat and let it cool.

Pour into molds and chill
Pour the cooled pear jelly into molds, spread the surface evenly, cover tightly, and place in the refrigerator for 2 – 3 hours to let the jelly set.
