- How to choose fresh pork
- Color: if it’s fresh pork, it will have a dry layer, bright red color, and a slightly firm surface. When cutting the meat, the cut surface will show a bright pink color, with white-pink skin that is soft. The fat part should be bright, firm, and have a characteristic aroma.
- Elasticity: press your finger into the meat and then release. If it does not leave a fingerprint, the meat is elastic and has a bright pink color, then it is fresh meat; if the meat leaves a fingerprint, it is spoiled and should not be purchased!

Mix meat with spices
Mix the fresh pork paste, green sticky rice, minced meat with fish sauce, shallots, seasoning, and pepper thoroughly. It is best to mix by hand.
Then place the mixture in the refrigerator for about 30 – 35 minutes.

Form the com cake
You take the mixed meat and press it in your palm to shape the com cake into a flat shape the size of your palm, or round depending on your preference.
To give the dish a distinctive aroma, place a layer of lotus leaves under the steamer, then place the cake balls in to steam for about 10-12 minutes.

Fry the com cake with an air fryer
Bake the cake for the first time at 160 degrees Celsius for about 5 minutes. For the second time, adjust the stove to 180 degrees Celsius for 7 minutes.
