Tips for choosing delicious durian
- Choose those with a strong aroma: you should choose fruits that have a strong, fragrant smell, and the aroma will be quite intense even from a considerable distance. Durian soaked in chemicals often has a very faint smell, or even no smell at all.
- Choose fruits with a greenish-brown shell, slightly yellow: observe ripe durian, the skin will have a greenish-brown color or a slight yellowish tint. If you touch the shell and feel a cream-colored powder, that means it is chemically treated durian that has been artificially ripened.

How to make Durian Noodles

Mixing and kneading the dough
Put 200g of flour and 30g of salt into a bowl, then mix well.
Gradually add about 1 cup of water into the mixture, then mix and knead until there is no dry flour in the bowl.
Continue kneading until the dough becomes a soft, smooth mass, then cover the dough with plastic wrap and let it rest in the refrigerator for 30 minutes.
Note: During the kneading process, add water gradually and monitor; when the dough blends well, not too dry or too wet, stop. Do not add all the water at once as it may prevent the dough from achieving the desired consistency.

Rolling the dough to make noodles
Sprinkle some dry flour on a flat surface, then place the rested flour on top to start rolling the dough. Use your hands to knead the dough a few times to make it more elastic and smooth.
Use a rolling pin to roll the dough out to double its original size, then fold it in half. Continue to roll it out and fold it again. Keep rolling and folding like this about 5 to 7 times, then wrap the dough tightly and let it rest for about 30 minutes.
This resting time will help the dough naturally develop gluten, making the noodles chewier.
Repeat the rolling, folding, and resting steps about 2 to 3 times. The folding and rolling of the dough also help make the noodles more delicious; the more you roll, the chewier the noodles will be.
Evenly and generously sprinkle dry flour all over the surface of the dough to prevent sticking. Fold the dough in half to make cutting easier. Use a knife or a cutting tool to cut the dough into strips about 1 – 2 cm wide.
Note:
- If the dough sticks to the knife, sprinkle more dry flour on the surface of the dough.
- Sprinkle a lot of dry flour over the cut noodles to prevent sticking. Gently stretch each noodle, being careful not to pull too hard and break them.
- Finally, gently shake the noodles to evenly distribute the dry flour all over them, avoiding them sticking together.

Prepare other ingredients
Black jelly is cut into even square pieces of about 1 cm.
Palm sugar is finely chopped.
Add 200ml of coconut milk to a pan, add 30g of white sugar and pandan leaves, mix well to blend the aroma of pandan leaves and sugar into the coconut milk. When the mixture boils, turn off the heat.

Boil white tapioca pearls
Put a pot of water on the stove, when the water boils, add 100g of white tapioca pearls. Boil for about 7 minutes or until the pearls float to the surface, then take them out and soak in water, then drain.

Blanching Noodles
Put a pot of water on the stove with a bit more water so that the noodles do not stick to the bottom of the pot.
When the water is boiling strongly, add the noodles, use chopsticks to stir gently and scrape the bottom so that the noodles do not stick together, blanch for about 3 – 5 minutes or until the noodles float, taste to see if they are cooked, and not mushy in the center is good.
Then remove and rinse with cold water several times to wash away all the excess starch, then drain.

Cooking Broth
Add palm sugar, 30g of salt along with 2 bowls of filtered water into the pot, stir the mixture well. While stirring, gradually add 30g of tapioca flour mixed with water and stir evenly.
When the water boils, add the noodles and turn off the heat.

Final Product
Place the noodles in a small bowl, pour the broth over and add a few black jelly cubes, tapioca pearls, small pieces of durian, sesame, roasted peanuts along with pandan coconut milk, and we have completed.
