Prepare the Dried Bean Curd Skin
The dried bean curd skin you bought should be divided into three parts, one part cut into rectangular pieces the size of your hand, and the remaining two parts crushed.
Soak all the bean curd skin in water mixed with a little salt, soaking the bean curd in hot water for about 15 minutes to soften it.
Proceed to blanch the bean curd skin in boiling water. Boil 5 cups of water, squeeze in a little lemon juice along with a tablespoon of salt.
When the water boils, add the crushed bean curd skin and the white bean curd to cook. Boil for 20 minutes, then remove, rinse with clean water, and squeeze out the excess water.

Mix the Bean Curd Skin
Put the boiled bean curd skin and white bean curd in a bowl. Season with 1 teaspoon of sugar, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of pepper. Mash and mix well so that the bean curd absorbs all the spices.
Next, mix the leaf-shaped bean curd skin with 1 tablespoon of annatto oil, mixing gently to evenly coat the bean curd.

Forming the shrimp
Lay the tofu skin on the cutting board, then add the filling to prepare to roll the shrimp.
Place a piece of bowtie pasta on the shrimp’s tail, then roll it up to prepare to wrap the shrimp.
Use string to wrap in a spiral shape from the tail up to the head of the shrimp. Wrap gently to avoid tearing the tofu skin.
When the string reaches the head of the shrimp, tie the head of the shrimp. Pull the string towards the tail, bending gently to make the shrimp more curved and visually appealing.
Once the shrimp is bent to your liking, tie the string at the tail; the shrimp will have a beautiful crescent shape after forming.
Note: Add a little more filling at the head of the shrimp and less at the tail to make it look like a shrimp tail.

Steaming the shrimp
Boil a pot of water and place a steaming rack on top. When the water boils, place the shrimp on the steaming rack. Cover and steam the shrimp for 20 minutes until cooked evenly.
Remove the shrimp to a plate, use scissors to cut off the string, and it is ready to eat.
