Snails 1 kg Water spinach 200 gr Instant noodles 2 packs Garlic 20 gr (minced) Onion 1 bulb Ginger 1 bulb Lemongrass 2 stalks Chili 40 gr Chili powder 4 teaspoons Satay chili 6 teaspoons Chili sauce 6 teaspoons White sugar 10 teaspoons Fish sauce 30 ml Oyster sauce 2 tablespoons Cooking oil 2 tablespoons

  • Choose dark-colored snails with unbroken shells.
  • The mouth of the snail should not have any mucus oozing out.
  • The meat of the snail should be fresh, and the snails should still be moving.
  • Currently, sea snails can be easily found in markets and seafood stalls with prices ranging from 250,000 – 290,000 VND per kilogram, updated on 28/01/2021.

How to choose fresh water spinach

  • Prefer water spinach bunches with stems as thick as chopsticks. The tips should be small and slightly firm.
  • Avoid choosing greens with unusually vibrant green leaves.
  • It is advisable to buy water spinach in season (from April to June) to minimize the use of harmful pesticides.

How to prepare Stir-fried sea snails with water spinach

  • Preparing and boiling sea snails

    After cleaning the snails with water, you put 1kg of snails to boil with 2 stalks of lemongrass, 1/3 piece of ginger, and 150ml of water.

    After 20 minutes, take the snails out and rinse them with water. Use a toothpick or sharp object to remove the snail meat.

    Rinse the snail meat again and let it drain, then slice the snail meat into thin pieces.

    Besides boiling the whole snails as instructed above, you can also clean out the snail’s guts, then soak the snails in rice water and chili, and rinse them several times with water before boiling. You can add a little salt while boiling.
