Duck meat 1 kg (1/2 duck) Duck blood 300 gr (2 pieces) Steamed bananas 7 fruits Unsweetened fresh milk 440 ml (2 packs) Fresh coconut water 600 ml Curry sauce 50 ml (1 jar) Curry powder 10 gr (1 pack) Lemongrass 5 stalks Ginger 1 piece White wine A little Vietnamese coriander A little Chopped shallots 3 tablespoons Chopped garlic 3 tablespoons Cooking oil 3 tablespoons Common spices A little (sugar/ monosodium glutamate/ seasoning powder)
How to choose fresh, delicious duck
For live ducks
- Choose ducks with smooth feathers, full feathers, and no down feathers inside.
- The breast of the duck should be round and plump, with a thick neck and belly skin.
- If the two wings of the duck can cross each other, it indicates a good duck with plenty of meat and easy to pluck.
For processed ducks
- Choose ducks with a uniform light yellow color, not too dark or bruised.
- When pressing the duck meat, it should feel firm and have elasticity.
- Do not choose duck meat that is soft or has a foul smell.
How to make Fresh milk duck curry and banana

Prepare the duck meat
Buy pre-processed duck from the market. To eliminate the fishy smell of the duck, rub salt all over the duck, both inside and out.
Then, use a few crushed ginger slices and a little white wine to rub on the duck for about 3 – 5 minutes, rinse with water several times, and then cut the meat into bite-sized pieces.
Tips for cleaning the duck, no odor- Pluck the duck feathers cleanly to avoid the duck meat from being smelly.
- Soak and rub the duck with lemon, salt, or vinegar for 10 – 15 minutes, then rinse with water.
- You can also cut the duck into bite-sized pieces and briefly blanch them in boiling water with ginger and roasted shallots for about 5 minutes to remove the odor.

Marinate duck meat
Put the duck meat into a bowl with 50ml of curry water, 10gr of curry powder, 5 teaspoons of sugar, 1 teaspoon of monosodium glutamate, 3 teaspoons of seasoning powder, 2 tablespoons of minced shallots, 2 tablespoons of minced garlic, then mix well and marinate for 30 minutes.

Cook curry
Place a pot on the stove with 3 tablespoons of cooking oil. When the oil is hot, add 5 smashed lemongrass stalks, the remaining minced shallots, and garlic to sauté until fragrant, then add the marinated duck meat and stir-fry over medium heat for about 10 minutes until the meat is firm.
Next, pour in 600ml of coconut water and cook for 1 hour, then add 7 steamed bananas and chopped duck blood to continue cooking for another 10 minutes.
Then add 440ml of unsweetened fresh milk and cook for another 10 minutes, adjusting the seasoning to suit your family’s taste, then turn off the heat.
Serve the curry in a bowl, adding a few leaves of Vietnamese coriander on top, and the dish is complete.
