Prepare Grapefruit Fish
After buying grapefruit fish, wash it thoroughly with saltwater or vinegar, then gently rub it to clean dirt off the fish.
Use paper towels to dry any remaining water on the fish. Use a knife to make 2 – 3 slashes on the fish to help it absorb the seasoning better.

The accompanying vegetables should be washed with diluted salt water and then rinsed with cold water, and then allowed to drain.
Peel the garlic, crush it, and then chop it finely to marinate the fish.

Marinate the fish
Place a pan on the stove and add 1 teaspoon of annatto oil and heat it up. When the oil is hot, add the minced garlic and sauté until fragrant, then turn off the heat.
Prepare a small bowl, add 1 teaspoon of cooking oil, 1 tablespoon of oyster sauce, 1 tablespoon of salt, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of sugar.

Wear nylon gloves and evenly spread the mixture over the fish, marinate the fish for about 15 – 20 minutes to allow the flavors to penetrate before grilling.

Preheat the oven to 200 degrees Celsius and let it stabilize for about 10 minutes.
Use 2 sheets of foil that are longer than the fish and wrap the fish evenly and tightly.
