How to Make Eggplant with Shrimp and Minced Meat

Grill the eggplant
Wash the eggplant thoroughly with a little diluted salt water and then let it drain.
Use a fork or sharp objects to poke holes in the eggplant to help it cook evenly and taste better.
Place the eggplant in the air fryer and grill at 200 degrees Celsius for 20 minutes.
Tip: You can grill the eggplant using an oven, a microwave, or other types of stoves depending on your family’s conditions!

Prepare the ingredients
Wash the shrimp under clean running water, trim the antennae and legs for neatness. Then place the shrimp in a pot to boil for about 7 – 10 minutes until cooked, then remove and let them drain.
Continue to peel the shrimp clean, removing the head, and place them in a separate bowl.
Place the shrimp on a clean cutting board and cut them into small pieces; for this dish, you do not need to mince the shrimp.
Wash the green onions and cut them into small rings.
Quick tip to remove the black vein on the back of the shrimp
- Count backwards from the tail of the shrimp to the second groove connecting the two segments of the shrimp shell, pierce a toothpick through this position and gently pull the black vein out.
- You don’t need to use a knife to cut the back of the shrimp; you can also use a toothpick to pry open the head of the shrimp to find the black vein. Gently pull this black thread out, and the shrimp will be clean.

Mix the filling with shrimp and meat
Prepare a bowl and add the cut shrimp and minced meat into it.
Season with 1 teaspoon of seasoning, 1/2 teaspoon of sugar, and 1/2 teaspoon of pepper.
Add 1/3 of the chopped green onions into the mixture, and use chopsticks to mix everything evenly.

Sauté the filling
Place a pan on the stove and add 1 tablespoon of cooking oil, then heat it up. Next, add 1/2 of the remaining chopped green onions and sauté until fragrant.
Then add the marinated shrimp and pork into the pan and stir-fry for about 3 – 4 minutes until the shrimp and pork are cooked, then add the remaining green onions, stir briefly, and turn off the heat.

Completion
Once the eggplant is cooked, wait for it to cool before peeling the skin.
Cut the eggplant in half lengthwise and fill the middle with the sautéed shrimp and pork to complete the dish.

Eggplant with shrimp and pork sauce is a quite simple dish but extremely delicious and appealing. The roasted eggplant is fragrant and soft, combined with the shrimp and pork that have a natural sweetness. How to choose good eggplants
- To have a delicious dish, you should select young eggplants; old ones will have many seeds, be very fibrous, and reduce the quality of the dish.
- You should observe the stem of the eggplant to determine if it is still fresh. If the white area between the stem and the skin of the eggplant is connected, it indicates that the eggplant is fresh, young, and tasty.
- If this part feels hard to touch and changes to a light purple color, then the eggplant is old and wilted, no longer tasty.
How to choose good green river shrimp
- Choose shrimp with shiny shells, green claws, firm bodies, and heads that are tightly attached to the shrimp’s body.
- The shrimp’s head should be bright green, not pale or turning red, and it must have intact claws, legs, tail, and body.
