Beef intestines 500 gr Pineapple 1/4 fruit Tomato 1 fruit Onion 1 bulb Spring onion 2 sprigs Crushed ginger 20 gr Minced garlic 3 cloves White wine 50 ml Oyster sauce 1 tablespoon Cooking oil 2 tablespoons Common spices A little (salt/ monosodium glutamate/ seasoning powder/ ground pepper)
How to choose fresh ingredients
How to choose fresh beef intestines
- When buying beef intestines, you should prioritize purchasing them directly from the slaughterhouse as that is the freshest option, or you can buy them at the market early in the morning, so avoid purchasing intestines that have been left for too long.
- When shopping, you should choose intestines that feel firm and thick. Additionally, observe the color of the intestines; choose those that are uniformly white without any bruises or dark spots to ensure food safety.
How to choose good pineapples
- You should choose pineapples that feel heavy, have a distinctive fragrance, and a naturally bright yellow color. Avoid selecting those with uneven colors, dark brown spots, or yellowish-red hues as they may be overripe.
- Pineapples that are round and short will have more flesh compared to long cylindrical ones.
- The larger and sparser the eyes of the pineapple, the better it is. This is because after peeling away the eyes, you will get thick flesh, and large, sparse eyes indicate that the pineapple is mature and naturally ripe without being soaked in chemicals.
How to choose good tomatoes
- You should choose tomatoes that have smooth, shiny skin, are plump and juicy with a bright red color, and the stems are still green.
- Avoid selecting those that are blackened or have small black spots, or those that have uneven colors of both green and red.
- If you touch them and they feel too soft or too hard, or if juice runs out, then do not buy them, as they may be spoiled.
How to Prepare Stir-Fried Beef Intestines with Pineapple
-
Prepare the Ingredients
Place the beef intestines in a basin, then add 2 tablespoons of salt, 20g of crushed ginger, and 50ml of white wine. Then, rub the salt and ginger into the pieces of intestines by hand to clean the beef intestines. Soak for 20 minutes and rinse the intestines under running water to remove all dirt and eliminate the fishy smell of the beef intestines.
Blanch the beef intestines in boiling water for about 5 to 7 minutes, then remove and rinse several times with water, let them drain, and cut into bite-sized pieces.
Wash the vegetables, cut the tomatoes into wedges, slice the pineapple thinly, chop the onion, and finally cut the green onions into sections.

Stir-fried beef tripe
You heat the pan over medium heat, then add 3 minced garlic cloves to sauté until fragrant, followed by adding the beef tripe along with 1 teaspoon of seasoning, 1 teaspoon of salt, 1 tablespoon of oyster sauce, and 1 tomato cut into wedges, stir-frying for about 3 minutes.
Next, add 1/4 of a pineapple cut into pieces and 1 chopped onion to the pan and continue stir-frying for another 5 minutes.
Finally, add chopped green onions and 1 teaspoon of ground pepper with 1/2 teaspoon of monosodium glutamate, stir well, season to taste, and then turn off the heat!

Final product
The stir-fried beef tripe with pineapple has the fragrant aroma of green onions and ground pepper, with the chewy texture of the beef tripe blended with the sweet and sour taste of pineapple and tomato. The dish is well-seasoned, and it tastes great when paired with rice.
