For live oysters with shells:
- You need to pay attention to the oyster shell, which should have a sharp conical shape and be tightly closed. If the oyster is still alive, the shell cannot be easily separated. You should avoid buying oysters that have been separated from their shells because they are often dead.
- Tap the oyster shell with your hand; if you do not hear any noise from inside, it means the oyster is dead.
For shucked oysters:
- You need to carefully observe the oyster meat, which should still be fresh, not slimy or discolored. If the oyster meat has streaks, it means the oysters have been soaked in water for too long and the meat is no longer fresh and delicious.
- Avoid choosing oysters with greenish meat as they are egg-bearing oysters and have a bitter taste, which is not good.
How to make grilled oysters with onion fat using an air fryer

Prepare the oysters
After purchasing the oysters, you should soak them in clean water for about 1 hour. The mud layer on the outer shell will soften, making it easier to clean the oysters.
After soaking the oysters, use a large brush to scrub the oysters from the hinge to the mouth along the curved lines to clean them.
Once the oysters are cleaned, place them in the air fryer and grill at 200 degrees Celsius for 2 minutes until the oysters open and are easier to separate from the shell. Use a knife to gently pry open the oyster and use your hands to remove the shell.
Tip: It is advisable to scrub the oysters under running water, as this will wash away the dirt on the shell more quickly, eliminating the need for multiple rinses. -

First, arrange the shucked oysters in the air fryer and grill at 190 degrees Celsius for 4 minutes until the oysters are cooked. Next, add the scallion oil you just made on top of the oysters, and grill for another 3 minutes at 190 degrees Celsius.
