- You should choose glutinous rice grains that are large and uniform in size, have a milky white color, are plump and shiny, and are not broken.
- You can also taste the rice; if it has a light sweetness and no strange smell, then it is good rice. Additionally, good glutinous rice will have a natural, characteristic aroma. In contrast, old rice will lose its scent and will not retain its deliciousness when cooked.
- Avoid buying glutinous rice grains that are dusty, have mold, or are yellow because these are old grains that are no longer fresh or of good quality.
How to choose fresh and delicious mung beans
- You should choose peeled mung beans to save processing time and make them more suitable for coconut milk sticky rice.
- You need to pay attention to buying mung beans that are fresh, have a bright yellow color, are plump and shiny. When you press them with your hand, they should feel crunchy, not soft; these are the good mung beans that you should buy.

How to make Sticky Rice with Coconut Milk

Prepare the ingredients
First, you will mix 400g of glutinous rice with 100ml of coconut milk and then soak it in 1 liter of water overnight. The mung beans should also be soaked in 1 liter of water overnight.
Peel the shallots, wash them clean, let them drain, and slice them thinly before frying until golden and fragrant.
Heat a pan on the stove, add 150ml of cooking oil and wait until it’s hot, then add all the prepared shallots and fry for about 5 – 7 minutes. After frying, allow the shallots to cool, then place them in a glass jar and store them in the refrigerator.

Steam the mung beans
After soaking the mung beans overnight, drain the rice and mung beans in a strainer to remove excess water, then mix each type with 1/4 teaspoon of salt.
Next, place all the mung beans into the steamer and set the time for about 15 – 20 minutes to steam the beans.

Mashing mung beans
After steaming the mung beans for 15 minutes, take them out and put them in a bowl, then use a pestle to mash the mung beans until smooth.
Note: Since the mung beans are cooked at this point, you only need to mash gently a few times for them to break apart.After mashing the mung beans, add half of the mashed mung beans along with the rice and a little cooking oil into a mixing bowl and mix well.
Next, pour the mixture of rice and mung beans into the steamer and steam for about 10 – 12 minutes. After the time is up, transfer it to another bowl.

Steaming sticky rice with coconut milk
After steaming the mixture of mung beans and sticky rice for the first time, take it out and put it in a bowl, then add the remaining half of the mashed mung beans and mix everything together.
Next, add 20ml of coconut milk and 1.5 tablespoons of sugar to the bowl, then mix well. After that, put the mixture back into the steamer for another 10 minutes to finish.
