How to choose fresh ingredients
What is brown fish? How to choose fresh brown fish
- Brown fish is a specialty of the Southwestern region, with flesh that is both fatty and sweet, and firm, making it very suitable for making soup.
- The distinctive appearance of brown fish is a flattened body, a dome-shaped back, a bulging belly, and glossy yellow-brown skin, bright and fresh.
- If buying live fish, be sure to choose fish that are still swimming actively, with clear, slightly concave eyes, not bulging. The skin of the fish should be smooth and shiny, with a whole body intact and no scratches.
- For processed fish, you can press the flesh with your hand; if the fish is elastic and firm, it is good to buy. Avoid choosing fish with mushy, overly soft, or overly hard flesh.
- You can find brown fish at seafood markets, traditional markets, or supermarkets.

How to choose fresh and delicious tomatoes
- You should choose tomatoes with a smooth, shiny skin, plump and juicy with a bright red color, and the stem should still be green.
- Avoid choosing fruits that are bruised or have small black spots, and those with uneven colors of both green and red.
- If you touch the tomatoes and they feel too soft or too hard, or if juice runs out, you should not buy them as they may be spoiled.

After buying the brown fish, cut off the fins and scales, scrape off the slime from the skin, remove all the insides from the belly, and rinse thoroughly with water.
How to prepare brown fish clean of slime
- When you buy the brown fish, use salt to rub all over the fish, then blanch it briefly in hot water.
